1991 custom-milled trim finish dilemma

Hello all! I just closed on this home built in 1991. The original owner was a carpenter and he milled all of the oak door/window/base trim of the home from red oak trees that were taken down on the property. Some of the trim received an awful coat of clear gloss polyurethane a few years back. I am replacing all of the flooring throughout with finished-on-site red oak (color to be determined based on trim color suggestions whether clear or greige or richer stain) along with repainting and new kitchen and baths with white shaker cabinets. Suggestions needed as to whether to maintain this original color and just lightly sand and apply a satin polyurethane, stain darker (and what color) or paint white for the most timeless look?
