Spicy minestrone chili

Soup is our winter mainstay, and minestrone, usually free form, is a frequent menu item. Earlier in the month I pulled out one of Mom's old recipe clippings and tried this one from Johnsonville Sausage. I'm sure it is Sicilian influenced. It was really good, inspired me to add more kick to my Italian sauces more often. I only used one "real" Italian sausage and one vegetarian version. It would work with either type. Unusual blend of spices, although not unheard of in the Mediterranean. Was a nice change of pace for us.


Touchdown Italian Chili - serves 12

I package (19.76 oz.) Italian sausage links (could use less, depending on how rich you want the chili to be)

1 cup chopped onion

3 celery ribs, cut into 1/2" pieces

1 each red, green and yellow pepper diced into 1" pieces (I only had a big red one and half a green one.)

1 TBLSP minced garlic

3 TBLSP olive oil

3 cans (14.5 oz) Italian style stewed tomatoes (I used only two 14 oz. cans, half store bought and half home canned. I think the home canned tomatoes are what put this recipe over the top delicious)

1 can (15 oz.) dark red kidney beans, rinsed

1 can (16 oz.) butter beans, rinsed

3/4 cup sliced black olives (I used kalamata, the only kind we like)

1 can (6 oz.) tomato paste (I think I used about 2/3 of an already opened can)

1/4 cup cream sherry, optional (I did not have this so used a sweet reisling. A soft red wine would probably also work)

1 TBLSP chopped fresh basil (did not have so used half TBLSP dried, which is 1.5 tsp.)

1 1/2 tsp. baking cocoa (yes, and it was good)

1/2-1 tsp. pepper


Grill sausage according to package directions. Cut in half moon slices when cooled. Set aside. In heavy cooking pot, sautee all vegetables in olive oil until caramelized/tender. Add garlic at the end so it doesn't burn. Add sausages and all remaining canned ingredients and seasonings to the pot and bring to a boil. Can add broth if it is too thick. Simmer for at least 20 minutes or more, to allow flavors to meld. Great the second day too.
