Comments (10)Just a follow up to say thanks for the input and to share with you what I finally ended up doing. I pre-heated the oven to 250, I put the ham (cut side down) in a cooking bag and added 2 tablespoons of orange juice. I also made a small amount of glaze consisting of brown sugar that was mixed with yellow mustard and a little orange juice. I drizzled this over the ham and closed the bag. This was an 8 1/2# ham and I baked it for 1 hour and 20 minutes. I then let it rest for 15 and served. It turned out great and I had very little mess....See MoreWhat kind of ham glaze with this wine?
Comments (3)Thanks. I just checked the Smithfield site, it's supposed to be removed from wrapper, wrapped in foil and warmed in 325 oven for 10-12 min/lb (so about 1 hr for this ham). Then the glaze packet is supposed to be brushed on while it sets. I was going to add some b. vinegar to the brown sugar glaze but I think I'll just see how the ham tastes without it, maybe I'll offer glaze in a gravy boat? Not a baked-on glaze so it doesn't matter, and that way we can taste if it goes with the wine. My mom specified the ham - I've never cooked one, though I do pork loin all the time. We're not really big on cured/processed meats in this house though the guys do like low-salt deli turkey for sandwiches. DS will eat ham but not ham sandwiches. Comments (32)I have a tiny vintage tv in the kitchen pantry run and often have the two cooking/food networks on for background noise....zip back and forth between the two as some are 'nails on chalkboard'. CooksIllustrated tasted hams yesterday and I think Cook's won by a landslide. Barely paying attention because I thought testing only three was not a good and fair test. They did test without heating and glazing. (I think it was Cook's brand. It was a clear package) I just checked and they have tested a few times but I don't have access to their site.. Then looked for other 'best' reviews. Many winners. Then found my method posted above and it is a JuliaChild recipe I'm sure where I first came upon it....simmering in aromatics.
