Best wood for indoor/outdoor ceiling in South Texas?

We are building a modern/contemporary home outside San Antonio, which means hot summers and moderate humidity but not tons of wind or dust. Our home design has a slanted ceiling that will be almost 40' wide from front to back: 20' across a great room and then continuing for another 19' under the roof outside, forming a covered patio. At the highest point, it will be 21'. We've planned on cladding the great room ceiling in tongue-and-groove wood, which would also cover the patio ceiling for a consistent look. In photo below, dotted line is roofline.



Friday, our architect expressed a concern that any wood we use will eventually turn lighter in color outside, leaving us with the original finish inside not matching the outside color--even if we refinish the outside, which I would really, really prefer not to need to do, since it would be horrifically expensive.

Is there a wood that will work here? Should I consider vinyl plank flooring?
