Recommendations for a white subway tile?

We have white shaker cabinets and a honed black granite countertop with slight white/grey running through it. It has much less movement than a Virginia mist for example. We are pretty set on a white subway tile and are looking for a transitional and I’d say more timeless look. We have Brazilian cherry floors. Does anyone have any specific recommendations? I was leaning towards a 3 x 6 with a light grey grout. I’m thinking something with some shine since the counter is honed. I was also looking at something a little more hand made looking but I wasn’t sure how that would work with the grey grout and how the lines would appear. Maybe something with an uneven surface but very straight edge would be better? My husband is thinking a little differently says he wants something very smooth. Our kitchen is on the smaller side. Thank you!
