Your architect that you need to design this will hire the structural engineer to plan the resupport of your roof and everything else. They will also provide the documents required for the permitting that this massive undertaking will require. They will have relationships with local contractors of the appropriate high level needed to accomplish this.

This project is for someone with the cash cost of the home purchase sitting in a bank account, ready to be spent for the hobby pleasure of making the house into something it isn’t. And getting zilch back on resale. Spending for changes because it’s what you want to do for the pleasure of it. It’s a giant zero return expense.

Maybe you should buy the house that costs double that you like better. You’d be able to sell it for what you bought for, almost guaranteed. Unless the bubble bursts again.

I believe the OP intended to note that roof trusses have been utilized in the construction of the home. While trusses are often designed to span from exterior wall to exterior wall, interior bearing walls may be included in the design to reduce the size/cost of the trusses. Interior walls may also function to resist truss uplift or shear. For these reasons, an evaluation of the existing conditions by a structural engineer is recommended before removing any walls.

The best case scenario is that the original builder of the home or the local building dept. has the truss plans and calculations on file and you can obtain copies. Provide these to a structural engineer and get their professional recommendations on how to accommodate the removal of the walls. Depending on your particular jurisdiction, your code official may want to review the engineer's report along with plans showing the scope of modifications before issuing a building permit.

I had a similar kitchen DIY project with a recent home purchase. Didn't think the walls were load-bearing but hired a structural engineer just in case for around $400. They confirmed the walls weren't load-bearing and documented & signed it for a permit. The project went great and I learned a lot.

I also have a great electrician who was able to work some magic, so that's important too. You'll want to check for any hvac because that could be expensive or impossible to reroute. Mine didn't have any running to the second floor so it was easy.

edit. If your home is a one-story the hvac shouldn't be a problem, although you have that vent in the ceiling that might need to be relocated.
