Why do they need to tear out the walls?

I've begun to contact contractors to get bids for my kitchen. The first contractor came, and kept talking about ripping out all the walls in the kitchen and putting up new ones. Is this a usual thing?

I do have one wall that will have cabinets and used to have beadboard (before I lived here or it still would), and I know that wall needs to be replaced, but I can't figure out why walls that are covered by cabinets now and are going to be covered by cabinets in the remodel need to be replaced.

Yes, I know I need to speak to the contractor, but am wondering whether anyone here can give me an explanation. I really thought that the cabinets could just be pulled off the walls and replaced with new ones.
