Comments (20)If you are going for a particularly lean ground beef, then maybe look for a lean cut, top sirloin or flank etc, with little marbling, and trim it well. Sear, if you want to. Cut into chunks about 1'' big. If you're using the food processor, do small batches, like a layer 1 cube deep (rather than filling the processor bowl). Process in 1 second pulses, start with 10 pulses, adjust to get the consistency you want. I like my ground beef fairly chunky like hand-chopped meat, not mushy like a meat hummus. If using a grinder, then just send it through. I prefer the food processor. Maybe annie1992 has more information. E.g., her method of half-freezing the pieces is cool. Same process for making ground pork, turkey, chicken, by the way. Though I won't eat those raw even if I do grind them at home. If you make a really low fat ground beef, it may make for a dry chewy burger. Fat adds flavor and juiciness. You can replace that by mixing flavor and liquid into the meat. I usually add at least salt, pepper, and olive oil (melted butter when I'm being baaad). SWMBO likes her meat mixed with something like teriyaki sauce. If you're not a purist, you could get all experimental, mix in huckleberries or wasabi or weird stuff. Don't mash the meat when mixing, or making the patties, or cooking the patties. I don't like ground beef that's been compressed to cardboard or burgers squeezed dry. I like almost a loose, slightly crumbly burger , admittedly I use a skillet not a grill. Comments (4)PM2, years ago I started onions via wintersowing. If I recall, the onions when harvested were on the small side. But as usual, I have to add this disclaimer - I am a VERY neglectful gardener! They were most likely planted out too late and harvested too early, lol! And probably sorely neglected in between! If you have the seed, I would say go ahead and WS it and see how you fare. I will add, though, that last year a co-worker offered me onion sets which her husband had leftover. I had never even seen an onion set, and when I saw that they were just tiny little pips, I was skeptical but planted them (and I thought she was going to give me half a dozen or so but there were almost FIFTY in the bottom of the box! How many did he order if he had 50 leftover?). Well, they were so easy to plant, and grew so well, that I think that is the way to go from now on, at least for me. Granted, these little guys got a bit better treatment than my poor seeds, but I still think it's easier to go this route. I just don't know if there is the variety available in sets that there is in seed, but I guess I'll find out if I ever get off my butt and get my order in! dawiff, nice onions! I'm glad to see that photo, as we were unsure as exactly when to harvest ours. They popped up out of the ground and my husband was picking them quickly (while they were still small), while my opinion was that as long as the roots were still well-embedded we should leave them to get bigger. Comments (3)I have found, and read, that onions will sprout less bulb and more green the deeper it is planted. I grew long-day onions last year and harvested some 2" - 2 1/2" onions. The previous year when I had them a bit deeper, they were all greens and scarcely any bulb. The caution of rot is a good idea in that we have had a lot more rain this year than in others.
