Wood species for painted cabinets-Don’t like maple, looks too perfect

My husband and I have started meeting with an architect and hope to start the build some day soon. We are looking into cabinets now. We plan on getting custom cabinetry made, most of which will be painted.

Our problem is that we are not liking the painted cabinets we are seeing in brand new houses. They are custom built, maple wood. In person they just don’t even look like real wood under all of that paint. It’s like they look too perfect, or smooth, or something.

We are very much into classic architecture and plan to build a federal style house. We love painted cabinets in old houses. How can we avoid that shiny, new appearance of painted cabinets that don’t look authentic? Is that even possible, since we are building brand new cabinets!? I may be silly for asking, I just wanted to see if anyone out there knew. Could we pick a different wood species besides maple to get the look we want?
