Can I freeze part of a lemon pie?

I tried my hand at making a Shaker Lemon pie with butter crust. I like it, but my husband doesn't and I can only eat so much. We're pretty isolated right now, so I have no one to share it with. (Also, it is such a strange pie that I'm not sure others would like it as I do.) Can it be frozen? It has 4 eggs in it, but the only fat is the butter in the crust.

My experience is that regular pie crusts (the type you roll out) get a bit soggy after being frozen - that may or may not be a concern for you. I think the cookie/graham cracker crumb crusts freeze better. I'm not sure what you mean by a butter crust, since both types have butter.

It's just a regular roll out crust, but made with all butter and no other kind of shortening.

yes line the pan with plastic wrap..then fold the wrap over the filling, then put in the freezer, when solid, pop out of pan, and place inside freezer bags. You will have a much longer baking time if you use the frozen pie filling. Some schools say to thaw the filling over night and then bake. But that would negate the point in freezing first in a pie pan/dish. I often just put the filling into a ziploc and freeze. Try it both ways and see, what works best for you.

A very simple recipe from my 83 year oldis Mother, who this year is still preserving food. Start with 2 gallons apples, sprinkle with fruit pectin. Cover with 4 cups sugar and 1/4 cup vinegar. Cover and let set over night. The next morning put your cans in a pan and cover with water and let get real hot, also do the same with your flats. Cook apple mixture about 30 minutes, doesn't take long to cook them, fill jars and put lids on. No need for hot bath or canner, and you can leave peel on if you prefer. Makes good fried pies, or pie fillng, or just good fried apples. You really need to try this method, very simple and time saving. I am usually hesitant to use simple measures, but this one works.

Annie, I am all set to make this pie for tomorrow's dinner, but I am not sure about exactly how much to do tonight. You said, " unless you macerate the lemon slices for 24 hours, the pie turns out bitter." So, do I stop just after slicing and straining out the juice, or after boiling? Do they just sit out or should they be in the 'fridge? Mine will get a bit less than 24 hours at this point, but I guess that's better than 2 hours, right? I cannot wait to taste this pie. I've been salivating since you posted the pics and description. AND this will be my first time to abandon my standard BH&G cookbook pie crust and try Nathan's Never Fail Pastry.

I think you could freeze the base and the cream cheese layer but I wouldn't risk freezing the pudding layer and the cream layer. Maybe make the base and cream cheese layer and freeze those, then do the rest the night before, after you thaw out the frozen part.

It won't be better than fresh...nor as good....but sure you can freeze it.

I'd put some stiff plastic or parchment wrapped cardboard, along the cut sides and top. Or maybe freeze partway first and use plastic wrap. Remove before thawing. The more air you keep out, the better it will be. The issue with the crust is that you can't heat it to toast it back up. If it's not nice when thawed, you can always reimagine it, like maybe break it up into a parfait or trifle.

Thanks for the advice. I think I'll gorge myself on it a bit more, then scoop out and freeze the insides for ice cream topping.
