Have walls already been removed? If they have not been removed yet, maybe leave the walls where they are and then you won’t have these issues.

I can’t tell what the rectangle is on left lower. Is that dining table? If so, there doesn’t appear to be enough room behind living room chairs for dining chairs to slide back. I like about 3’ around dining table. Do you need two dining tables that are relatively close to each other? You might consider a banquette in bottom left. That could save you 2-3’ of space. Need more info on your family needs but I think we can help you do better.

Will I regret having two side chairs facing the tv instead of a second couch? I’m just not sure a second couch would fit there and not be too close to the island.

I just did quick look and you do not have space for two couches. I would put sofa facing TV with pretty sofa table so when you come up those stairs it is pretty view. One chair can be placed with back to kitchen area and a smaller scale chair (swivel) would function best, angled in corner to right of TV but pulled into room. This would allow for a pretty nice size square coffee table that would serve sofa and chair. The swivel would have a smaller drink table near it. I can lay this out to scale later today if you wish.

Open concept sounds like a great idea. “Sounds” is the operative word. Sounds bounce all around in a large, single living space. Think carefully about how you and your family will actually live in one room. Can you run the dishwasher after dinner and still hear the tv? If you have kids, do you really want your living room on display to anyone who appears at the front door with all the toys all over? Can you run the food processor , the microwave, the exhaust fan while someone in the living space is trying to talk on the phone? Will it bother you to see all the dirty dishes piled on the counter while you relax at the dinner table? Where do you hang pictures if you have few walls?

I totally understand your point and appreciate what you’re saying! With all that considered, we are excited about the open concept layout. We currently live in one, and I love being able to talk with my family or watching my son while I’m prepping dinner. Also, the nice thing about this house for more rowdy gatherings is that the family room is downstairs, along with a play area and bar. So the living room space you see in the image won’t be used much of the time! But I still hear ya, lots of factors to think about.
