Does tempature affect how long it takes for hips to ripen

I have seen that someone said it takes hips aprox. 90 days before they are ripe.... is that based on the rose itself or dose the environment change that.... it seems to me that whether had a lot to do with my father's corn crops in their harvest times... if it was hot and dry the corn ripened faster than when wet and cool..... of course that is taxing my brain because that is going back more than a few years..... so here, in it seems that when it is hot my roses actually blow faster.... so does it carry through to hips as well.....

Is there a way to tell if the hip is ripe before it is picked.... I have some hips that turn yellow or orange, but others seem to be brownish) .... but I am trying to keep them on the plants.... but something is eating them..... do things eat green ones, or are they ripe.
