Active Dry Yeast vs. Instant Yeast

I would like to try my hand at Jim Lahey’s No Knead Bread. The NYT recipe calls for instant yeast. I have active dry yeast. From reading online, it seems that I can interchange AD yeast with instant yeast on a 1:1 basis and all I have to do to make it work is dissolve the yeast in some of the liquid first.

Before I mess up 3 cups of flour, could someone tell me if my assumption is accurate, please?


Also, because yeast is hard to come by, once I open the little envelope and remove the 1/4 teaspoon, can I freeze it to keep the remainder fresh? Would you vacuum seal it with a FoodSaver before freezing?
