Comments (23)After seeing this thread the other day, I decided to give Ree's macaroni salad a try. DH won't eat a macaroni/pasta salad that isn't mayonnaise based, so I'm a bit limited there. I made several substitutions and additions, because I didn't want to go shopping and used what I had in the pantry. And DH insisted on having peas and boiled eggs in it. Those are his "musts" for macaroni salad. We both loved the result. Obviously, I didn't have that specific pickle; instead, I used sweet pickle relish and some juice from escabeche I canned last summer. How's that for spicy? DH was also concerned that it didn't have mustard in it. He kept trying to get me to put ingredients in it that I used in my regular go to salad. I wanted different. The dressing Ree made accomplished that. He did suggest that I make it again and add shrimp to it. Sounds good to me. I rarely miss a Pioneer Woman episode, but must have missed that one. Comments (6)I LOVE macaroni salad and make it very similar to the chicken salad I posted in another thread. Salad macaroni, chopped hard boiled egg, finely chopped celery, chopped black olives (for hubby) and thinly sliced green onion (i only use the green tops but the entired onion can be used). Because i dont care for a tangy macaroni salad, i dont use vinegar or pickle juice, just mayo, salt and pepper as the dressing. I lightly coat the macaroni with mayo because I don't like a gloppy salad, but this is also a matter of personal preference. Cooked bay shrimp is another ingredient I usually include, but they can be left out if desired. Comments (3)Maybe you just need to add more of the sauce until you get the consistency you want. We have a restaurant here that has really good tasting Potato Salad but it's not creamy enough for me... rather dry. When I get it home I just add more Mayo and then it's to my liking. 😁 Perhaps you can do the same with your Pasta Salad. Comments (5)This is what I do: if you are going to add pasta it makes a boat load. Marinated veggie salad….. 1 sweet onion, diced…. Pepper, cut into skinny strips….any color pepper cuke….seeded and cut into large dice zucchini…peeled and cut into large dice a box of cherry tomatoes….halved 2 or 3 carrots, shaved into match sticks Small head of broccoli, cut into florets and blanched And can add a couple of cans of cannellini beans drained and rinsed> Add enough of “the dressing” to coat all….dont over dress and make it soupy. Can add up to a pound of cooked pasta to make a pasta veggie salad. SALAD DRESSING 1T dijonmustard 1 clove of garlic, crushed (or chopped very fine) 1T honey 1/3 cup cider vinegar and balsamic vinegar, mixed…mostly cider Mix together, I use a wire whisk 1/2 cup olive oil...whisk the oil in a slow stream, whisking all the while Then I like to add some dried or fresh herbs....most of the time I use oregano.
