Egg Top Twice Baked Potatoes (microwave then halve lengthwise, scoop out put shells on small sheet pan. Saute onion, garlic, S&P. Mix in potato, some grated cheese. Fill shells leaving a well in center. Break an egg into each well, sprinkle S&P. Bake in oven 400F 15-25 minutes until the whites are milky but the yolks still runny. Or for firm yolks, broil about 5 minutes. Top with sprinkle of chives.
