I eat soup for breakfast and lunch generally until I'm done with the curernt batch that is unfrozen. I just finished my first gallon of lentil soup, so tonight I am going to brine the beans for this bean soup. I just started brining the beans in the past six months or so and can't believe the difference. The skins are so much more tender and it takes a lot less time to cook the whole soup. The outcome is that you can cook it till the beans are tender without having all the skins come off and floating around. I had just bought a ham to use mostly for soups and froze quart bags of meat and skins to use, but also have the big bone, soooo.. this time I'm making 4 lbs at a time so I can use the big bone. Comments (14)We eat a pound or two of pintos every week. I rinse them till the water is clean, boil them for a minute, let them soak an hour or two, then pressure cook them for seven minutes in the soaking water and let the pressure release on its own. We season them in many ways after they are cooked. At least with pintos, cooking them in the soaking water results in a nice, thick deep brown saucy liquid that we use when we season the beans..or make soup...or mash, or whatever we do with them. For soup, I add chicken broth and other vegetables. I wouldn't dream of throwing out the soaking liquid...and we do not have a gas problem here. We've been cooking them this way for about three years now. I understand many people have problems with the gas, and I'm very glad we don't. We have always eaten a variety of beans ~ in chili, salads, soups, etc. ~ admittedly, we've gotten kind of hung up on pintos and black beans in the last couple years, but boy, they're good! Comments (16)Betty, you'll buy port at a liquor store. When you go there, just ask for some assistance in finding a reasonably priced port. They'll be able to help you - that's what I did the first time I bought it! :D This is the recipe for the butternut soup I make: Butternut Squash Soup with Port 1 butternut squash (4-5 lbs), halved and seeded 1/4 cup olive oil 1 russet potato, peeled & chopped 1 yellow onion, chopped 1/3 cup whole cloves garlic (about 6 medium cloves) 6 - 8 cups chicken stock 1/4 cup ruby port 1/2 teaspoon ground allspice salt & freshly ground black pepper to taste 2 tablespoons unsalted butter toasted pumpkin seeds for garnish (optional) Preheat the oven to 450 F. Brush the cut surfaces of the squash with 2 tablespoons of the oil and bake on a cookie sheet until tender, about 45 minutes. Let cool and scrape out the flesh into a bowl. Heat the remaining 2 tablespoons of oil in a soup pot over high heat until hot. Add the potato, onion, and garlic, and cook, stirring, for 5 minutes. Add 6 cups of the stock and bring to a boil. Stir in the cooked squash, port, and allspice, and cook at a low simmer for 40 minutes. Puree the hot soup with an immersion blender. Add additional stock if necessary to arrive at the desired consistency. Add salt and pepper. Swirl in the butter. Serve in soup bowls and garnish with the pumpkin seeds. Comments (7)I'm reporting back... everything turned out delish! I had to add a bit more broth since the pasta helped make the soup nice and thick. I think if we had waited one more day to eat this soup, the spinach would have suffered. Next time I make this, I'll add the spinach at the last minute, as lindac suggested.
