beans for bean soup question

I've been reading through some recipes and some call for soaking overnight, some all for heat then soak, some say drain the soak water, reserve the beans....

so I have some questions

1)is it best to use all or some of the bean soak water if you want replace some or all of the water with chicken stock? I'm wondering if using some of the soak water affects how it all thickens or tastes in the end.

2) does the soaking method matter?

Any other do's or don'ts?
