White Bean and Spinach Soup--ques about the spinach

If I make this soup tonight, and plan to serve it on Sunday, will the spinach get all icky or will all the flavors etc meld deliciously?

In a nutshell, saute garlic and shallot, then add 3 to 4 C of veggie stock, 1 can diced tomatoes, 1 can white beans, rosemary, black pepper and a dash of red pepper flakes. Bring to boil, and add 1/2 C pasta and cook for 12 minutes. Add spinach (either 3 C fresh, or I used 1 box frozen). The recipe was posted by justcallmetoni over at recipezaar.

The spinach will be fine, the problem is the pasta will absorb most of the stock if allowed to sit overnight. I would make it up to the point of adding the pasta and then allow it to sit until tomorrow and then add pasta and finish cooking.

1/2 cup of pasta in 4 cups of liquid isn't going to make a huge difference in amount.
But the spinach will decicedly get icky...
Make the soup and add the spinach at the last minute....heat and then serve.

Technically yes, but you're not going to get that huge of an amount from a normal serving of veggies. It's more of a concern to those who are sensitive/allergic to it...and even then it's more of a skin irritation or upset stomach thing for most people who are sensitive. Beyond that, even if just for taste and texture issues, you'd be washing those crystals off your plants before eating them. It's a bit like eating sand. There's a kinda scale (not a literal 1-10 or whatever scale) of how severe different types of plants produce this...and spinach is really low on that scale. Even when it doesn't produce physical signs of crystals outside the leaf stoma it's still a part of the makeup of the plant.

Mache, Claytonia, Spinach, and Fava Beans

Mache, Spinach, and I think Claytonia are all winter hardy. They will live through the winter if protected by a Cold Frame or Low Grow Tunnels. Actually, I find the biggest risk is "Cooking Them" by not opening up the Cold Frame or Grow Tunnels on Sunny days. The plants slow down in growth and then pretty much do nothing Dec - Feb. They overwinter and pick up again in March, giving you a nice early crop. I planted Spinach and Lettuce on Friday Sept 19th for my Grow Tunnels. I also tried about 2 weeks ago, but didn't have good germination as we had a hot spell and the soil may have been too warm. I believe Fava Beans are like Lima beans and thus won't survive the winter, even in grow tunnels. They are a summer crop only (I think). Good luck. Ken

Small white dots on spinach leaves

I am growing Corenta hybrid spinach variety. I doubt that the white dots would be aphids. I do not have a magnifier but when I look from close they do not look like insects and they do not move around at all. Also they are too nicely almost symmetrically spaced on the leaves and that do not look like aphid aggregation. I am not convinced that it is not a disease because I let it progress on a few spinach that I did not harvest, and I started seeing small `lesions` when I rubbed off the dots. It also felt gluey on my fingertips while before it was a dry sand-like feeling.

Trust me,if you cook the pasta in the soup and let it sit overnight you will have very little liquid left in your soup.

Well, between paddy's first post and lindac's post, I threw together the soup. It smells divine! I guess I'll know more on Sunday, huh? I set aside more broth in case it thickens up too much, and I am crossing my fingers on the spinach.

When using pasta and spinach I always cook them up and add them just before serving...pasta sucks up the liquid, spinach turns it green.

I'm reporting back... everything turned out delish!

I had to add a bit more broth since the pasta helped make the soup nice and thick. I think if we had waited one more day to eat this soup, the spinach would have suffered. Next time I make this, I'll add the spinach at the last minute, as lindac suggested.

Kale will hold up well in this soup and is actually more authentic in an Italian soup than spinach.
