New 48” Wolf Range convection doesn’t work properly

And Wolf won’t stand behind their product.

I installed a new 48” wolf range in a remodel for a home we are living while we build. Since installation, the convection would burn veggies being roasted on the convection setting and the Convection roast literally was perfect on one side and no browning on the other. I even too a picture.

I’ve had the techs out here four times and finally a senior tech came yesterday. he used his diagnostic tools and told me that everything according to the diagnostic tools was working the way it is supposed to.

One of the earlier techs said he had seen this in the past and the way that they tested it in the real world was to put a cookie sheet with biscuits and let them cook on convection mode. Right in front of his eyes my biscuits in five minutes we are a very dark brown along the backside and were only slightly browned on the front. I told him that I don’t eat these kind of biscuits and that if he wanted to take them home he could, so he turned the pan around so that the biscuits would brown on the other side.

When I cook now, I have to babysit the range and turn the roasting pans and the roasted vegetables even using a spatula to move them around so that they cook evenly.

I got a call from subzero that evening telling me that the tech had reported that the range was working as designed. I asked if he had even put in his notes the baking test with the biscuits. Nope.

I’m glad this happened because I was going to put the entire line of subzero and Wolf appliances in my new house.

I think I’m going Miele in the new house. I will never buy another Wolf.

A friend told me that he had heard about this problem years ago and wondered if I was sold a range that was not a current model. I have no idea how to check myself.

Anyway, had to put this out there. And, i’d love to know if any other new owners have experienced this.

Is it only with the convection fan on?

Our 2008 all gas Wolf range’s oven cooked very unevenly as well (from one side of the oven cavity to the other side, not front vs. back). Turned out to be a burned out burner tube. The flame ports were completely burned out (gaping open) along the length of one end of the burner tube. When the burner was replaced, it resolved the issue.

I have A Wolf DF 36” range not really usable for baking because of the blue chipping enamel but when I did use it, the conv roast and all conv were higher speed fans. Try using the conv bake setting.

What type/brand of oven have you had before? Convection sets up an air current and you can get exactly what you describe because the fan dries the side it is blowing on increasing the browning on that side. I think it gets a little oversold that it will even out all of the heat. Wolf deals with this by using dual fans which helps break up the airflow. Are both fans running? Others have baffles or fans that reverse periodically. I have seen a few brands that have very slow fans.

How long are you preheating? I find that this oven takes awhile to fully preheat. It’s not really ready when the light goes off.

I think Miele has had a few problems with their DF range. You might search it on this forum.

I really like the Wolf range but never even looked at ranges at all before this week because of price/oven issue. However, that was before I found this deal which put it in my upper price range. So I'm trying to research the range and look at it realistically vs getting swayed just by the price. If I didn't get the range, I would be buying the Kenmore double convection oven with Wolf 5 burner gas cooktop. Not sure if Wolf range ovens would be better or not. I do LOVE the cooktop part of the range and the "wow" factor however just concerned with oven heights. However, I would have the steam oven at perfect level above the warming drawer so that may offset the lower ovens on range. I live in southern TN. Not that I want this to influence my decision, but houses in my neighborhood (range from 500k-3 Million) do have majority high end appliances. So even though we don't plan on selling , I believe the Wolf range would fit the house better... However, for me personally, I would be happy with both scenarios. Thanks for all the help/input!!

Eliza6eth, I would do as Winnetka suggests ... wait to see if you can locate a floor model of the older style AG. One poster on GW found one recently, so there may still be some out there. I would also make some calls on my own to other stores rather than relying on one dealer to find one for me. The older style Wolf AG still has the black shiny top that you aren't fond of. However, I've found that it is a snap to clean, and a final wipe with a microfiber towel gets rid of any smudges and fingerprints. The entire top comes off if you needed to soak it in the sink, but I haven't made any messes that required more than a soapy sponge to the surface. In response to your 2nd question ... is Wolf's new design a mistake for them? I tend think so, because a lot of people who would have been attracted to their old-style range are not going to appreciate the new, sealed burner model and are going to look elsewhere. Because they no longer offer that option, Wolf is going to lose out on that entire demographic that does not want sealed burners. Personally, I wouldn't want one of the newer Wolf AG ranges ... the top no longer comes apart and there are too many cracks and crevices on the cooking surface for food and liquids to fall into. The grates are gigantic! I prefer the single grates on the older version because they are easier to lift off, clean, etc. and I really like the beefy look and feel of them as opposed to the newer grates. The new style AG oven has a spark ignitor which "click, click, clicks" each time it relights, whereas the old style has the glowbar style that doesn't make any noise at all. I looked at every little thing on both the old-style and new-style Wolf's when I was shopping for a range, and IMHO, the old-style is far superior in build quality and design. I don't know if performance has been sacrificed, because I haven't cooked on the new version.

We're residential builders who have installed both Wolf and Viking appliances, and I would also tell you to run from Viking (not that you mentioned wanting one), especially the Viking refrigerators. Horrible product--just horrible. My Viking range is good, but not without it's issues (cooking unevenly in the oven, the temp being way off, taking several tries to get the burner igniters to work, etc.) We're building a new house for ourselves right now (which we do every few years, the current house w/ Viking appliances is 2 years old) and I'm going with a 48" Wolf rangetop with 6 burners and a griddle, or 4 burners with grill and griddle (for reasons mentioned above...never more than 4 burners used at a time!). Then we'll put in 30" double electric wall ovens. I currently have a 48" dual fuel range, but I have learned the gas ovens actually don't cook as evenly as electric ovens, and most people actually prefer gas cooktops and electric ovens. The purpose of having gas ovens in pro ranges was because it would be too expensive to have electric ovens on all of the time in a restaurant setting where your ovens are on all day/night! Now that we're puting pro ranges in our homes, we just assumed they're better when most people don't find that they are! Another reason for the double wall ovens, is that I like the idea of having my main oven up higher, especially with my kids (8mos and 2.5 yrs) running around. Lastly, Wolf doesn't offer ball-bearing racks to smoothly glide out that giant turkey or pot roast! A lot of the other oven-makers (GE Monogram, Electrolux and lots others) have these awesome racks installed now. :) Good luck! Deb in Seattle

Our steam oven In the 48 inch model was leaking then stopped working. We finally had it replaced. New model came. And it leaks too! If you get that Thermador with the steam I don’t think that steam oven will last. They could never figure out how to stop the leak to replaced it. Needless to say we aren’t pleased the new model leaks too. Very frustrating with what seems to be faulty engineering.

Geez, I bought a $700 Frigidaire gas range a couple years ago and it does way better than that. There's a slight difference in browning front to back but it's far better than my old non-convection electric range. I'm happy with it. Kinda glad I didn't decide to spring for the high end if this is what you get.

to bring the story full circle.... I bought a Meile range, oven, steam oven and two dishwashers. The convection is absolutely perfect. Have done multiple roasts, no turning and turning to get an even roast. While I regret buying a Wolfe last year, I would have bought one for my “forever” home. So glad I went with Meile!!! Oh, and the dishwashers are MUCH better than Bosch. Still love the SubZero fridge and freezer.
