Comments (53)When I was a very young, and enthusiastic newbie to homemaking, I spent entirely too much money on a set of Henkels Four Star knives. Then, I fretted and stressed about keeping them from getting banged around, wouldn't put them in the dishwasher, and obsessed about keeping them sharp. I ended up losing them during a move (long tale of woe) and I hadn't the money to replace them but still had to cook. So, while shopping in Chinatown one day, I picked up a cheapie cleaver and a few anonymous kitchen knives and realized that I could keep them sharp and not worry about them getting banged around as I could replace them at will. There is a brand, KIWI (made in Thailand), that these little stores carry, and my favorite is 6 1/2 inch long, appx. 2 inch wide blade with a very slight curve in the cutting edge. The end of the blade looks as though it was supposed to be a couple of inches longer, but someone chopped off the end at an angle, with the shorter side of the angle being the blunt side of the knife. These knives are wonderfully sharp when you buy them, made of stainless steel, easy to sharpen on a stone and they cost about $2 a piece. Comments (17)Well, I'm definately going to save this thread, lots of good ideas here and I'll probably be roasting a chicken again. BF and I both don't do this very often as singles, (particularly mostly-vegetarian me) and we can't handle all the leftovers, but together . . . I had a lot of fun making a new chicken soup today! I invented a recipe and it is FANTASTIC. And the perfect soup for sping. I took all the ingredients of that ubiquitous restaurant spinach artichoke dip (sans tons of fat) and made it into a yummy soup. Here's how I did it if you want to do something similar. This is great for those on restricted diets. First, I boiled the chicken carcass in half water and half vegetable broth. Then, I put it in the fridge and waited until the fat congealed and then I skimmed that. Then I strained out the broth. Then, I picked all the little bits of meat off the bones and threw them in the pot. I could hear BF saying, "waste of time" but I was channeling my Bubbe, she of the hands continually bathed in chicken fat! There was a bit of bouquet garni seasoning already on the chicken. Then I added some small pieces of chicken, mostly white meat, that I had in the fridge. The rest was dead easy. I added a cup, maybe cup and a quarter of chopped, well-drained marinated artichoke hearts that I had languishing in the fridge, about the same amount of frozen chopped spinach, about 1 TBLSP chives (I can't have onions), 3/4 of a red pepper, chopped and sauteed in EVOO. About 1/2 tsp. oregano for seasoning. I didn't add garlic but I could have. I boiled this for 20 min. To "whiten" it I wasn't very systematic, I used up the bits and bobs of white stuff I had in the fridge--about 1 TBLSP of lite sour cream, about 1/3 cup of 1% milk, and about 1/3 cup of neufatchel cheese. You could use cream if you like, or real cream cheese. The sour cream wasn't necessary, I just had it to use up. Top with grated parmesean and serve with whole grain pita chips. Comments (29)Cape Cod: Chatham Islands: If you have to choose one, I'd recommend Nantucket over Martha's Vinyard. There is a high speed ferry which only takes an hour but be sure to make reservations. The Vinyard is beautiful but very much like the rest of the Cape. Nantucket's historic district is truly like walking back through time - complete with cobblestone roads! Definitely worth googling to see if it's of interest to you. RI: Newport - Cliff Walk, Mansions, Thames St shops/restaurants, Inn at Castle Hill - fabulous (but pricey) waterfront dining/lodging or just enjoy a drink while sitting in their Adirondack chairs (weather permitting). Comments (298)Sorry I have been missing for a few days. My husband and I were away in Virginia looking for a new home. This is our second trip. Our first was to decide where to live and this one was to look at houses. This past weekend made us realize this is the right decision for us. The state is absolutely beautiful and we even found a great log cabin. We are going to wait and see if it stays on the market while we finish up getting our house ready to list. If we lose it, there will be more but we are excited now to go ahead and make the move. I do want to thank some friends for some Happy Birthday greetings I received.
