Best insulation for cathedral ceiling remodel

We are remodeling/adding on to our home. We have exposed beams and cathedral ceilings with tongue and groove car siding in the existing part of the house. We are replacing the roofing and in order to avoid having to re-do the nicely aged car siding, we are planning to insulate from the outside. We have 6 inches of space to insulate and want to seal up the cracks between the car siding and beams and everything else to get the tightest fit and best r-value. We realize that we will be very deficient in ideal r-value, but that is what we have to work with. Two suggestions have been to spray in foam (which type?) OR to use 2 inch foam board (caulk around cracks), then add 3 1/2" of rockwool insulation on top, then the roofing. We live in a heavily wooded area, so rockwool was advocated as a "critter" deterrent as well as sound barrier. But others have said that we will get a much tighter seal with the spray foam. Ideally having insulation as green as possible is a consideration. Also, thoughts on moisture barriers, leaving 1/2 inch of space, vents or no vents? We are in zone 5 (cold winters, hot summers). We also have an addition where we will be insulating from the inside. We would very much appreciate any input that you would provide. Thanks!
