Need fresh eyes re: my backsplash

We recently had our entire kitchen remodeled & a few weeks after the backsplash was installed, a few grease spots showed up on the tiles near the stove that would not come out. The tile is crackle and they sealed it properly I am told. I fully trust the company doing the remodel so they are not the issue. Now that we’re having this problem with the grease spots, I feel soured about the backsplash and now the fact that the tiles read yellowish in comparison to the countertop is bothering me. I’m considering having the entire backsplash ripped out and redone with a simple non-crackle white subway tile that matches the counter better. Ultimately a low maintenance kitchen is my goal. Not sure if a re-do would be cost prohibitive. I would probably not do the herringbone pattern behind the stove if redone. I could use advice from anyone with an informed opinion. Thank you. How badly do the tiles and counter clash? (from a distance I think it looks okay)
