I had the very same dilemma, trying to find a small vanity to put in my powder room (the space had a very inadequate, builder-grade (read: cheap) pedestal sink). We ended up going to Expo Design Center, where one of their vendors (Strasser) lets you custom-design your own vanity, with a range of sizes, styles, door types, stain colors, counter materials, sink types, etc. While this wasn't the cheapest option, it allowed us to get exactly what we wanted. Since nothing "standard" fit the space, it was worthwhile. The new vanity was delivered within about 3 weeks after ordering, and my husband was able to install it within a few hours (including brand new faucet, which we'd purchased separately). I did as Kats suggests several years ago with former house. I had room for a spacious vanity with a remodel and opted for one right sink, a bank of wide drawers for storage, and a much needed built in laundry hamper. A local cabinet maker made the vanity and a towel tower, GC installed corian top. I chose alder with a whitewashed and glazed finish, it was not a budget breaker.

Also, I could consider painting the vanities a dark color, maybe a very dark green like in photo below (I tried to find a dark gray that works but came up empty). Do you all think that would help update the overall look? The beige tiles and brown granite are killing me basically.

Yep, I think her vanities tend to be custom. Kohler makes some in a lighter wood. I found them to be very expensive for what they were. Not sure what your budget is, but the top one with the overlay drawers should be something most decent cabinet manufacturers could put together with vanity depth cabinets. I would find a local cabinet showroom and see if they can do it. I think vanities are the hardest thing to find. There just isn't enough between big box store and custom. :(
