Fourth of July Menu? Go!

One of the cool things about some national holidays is that everyone*** is doing the same thing: gathering around, cooking and eating.

On July 3rd, for example, no matter where you are in the USA, you know that in 24 hours most of the people around you are likely to be standing around a grill watching things get charred. Or if they aren't, it's because they can't. But if they didn't have to work, or stand at attention on the National Mall, or be incarcerated in a camp near the border, they probably would trying to be at a grill somewhere.

Sorry, I'll try to hold my bitterness in better. Hey, bitter better, that's good.

Having just recently emerged from a version of culinary incarceration known as the ketogenic diet, I'm going to be back in the happy world of cooking and eating with friends. As I imagine many of us will be.

So - what's on the menu chez you?

*** Obligatory excusatory footnote: After some tongue-lashings received from those more woke, I acknowledge that not everyone observes the 4th of July with a cookout. I don't recall my family even owning a grill when I was little. We were more likely to have had steamed fish than hot dogs on July 4th. There's vegetarians. And the great majority of humankind for whom July 4th is just another day. And all those without the privilege or the moral insensitivity required to eat other sentient beings. Footnote over ***

Over here, we will be having Q'd ribs, fried chicken, potato and pasta salad, sangria and watermelon. And, because I now feel insensitive, I'm going to make some steamed dumplings and black bean spare ribs too.
