The thing that worried me about pressure canning was the boom factor. Just knowing that thing was there and was building pressure and was sitting mere feet away from me while I watched that gage was unnerving the first time or two. Then I got used to it and it was fine. Eventually, I preferred using the pressure canner over using the BWB canner because you don't have to keep that boiling water level topped off. Quarts especially are terrible in a BWB because there is usually not much room to spare above them as it is. Granted, you can't just set it and forget it with a PC, but it is a lot easier to just watch and adjust the burner. The one thing that I do not like about PC is that it is more time consuming per batch than BWB. You have to start with relatively cold water, wait for the temp and pressure to ramp up, then time it, then wait for the temp and pressure to fall, then you're done. With BWB, you can fill the pot with new hot filled jars as soon as you are done with the first load and never miss a beat. Water maintains a boil before, during (mostly) and after. Double or triple batching (separately maintained batches) is a breeze with BWB since you can prep and fill jars close to the time the current load is going to be done. You can't make one big triple recipe and divide it, but you can make three separate recipes and process individually and then can each in succession. Nice for relishes or chutneys or anything that has to marinate overnight as long as you have refrigerator space to do it. I PC canned a lot of pints of green beans and they tasted just like the cans you get at the store. That's fine by me because I like that flavor. But if I do them any more, I'll do quarts instead of pints since I can down a pint by myself at one sitting. usually two. And I canned carrots in it as well. And it seems like plain blueberries. Been a while since I did those. Neither method is really that difficult. Just understand each and how to do them when you do them.

especially if you got it from someone who grows in shade houses.. or polyhouses ... reduced light levels... will make coloration off but a quick call to the supplier wouldn't hurt ... put them on notice regarding your concern ... in case you have problems later on ... they tend to like to hear.. i called you a month back .. rather than .. i have had this for 6 weeks.. and now i think i have a problem .. if you follow ken

Here is something interesting...I've checked the box earlier to get the replies emailed to me, yet now the message below says, "Check here if you would like post replies emailed to you. blah, blah, blah." Usually it tells to to click or something if you NO LONGER want email replies emailed to you. hmmmm......Well, I'll check the box again. I wonder if it did that because I am replying again so soon. marti- yeah, I feel that way most days. It takes me a few hrs for my meds to get in me for me to get moving around here anyway. I did get the 'fallen' shelf back up late yesterday - and half the shelf above it this morning. Instead of the long shelf (wall to wall) I used 2 smaller pieces I had here (the ends from when they cut my shelves to size) for the higher shelf - nothing else to use those for anyway. There'll be a few inches open between them but I won't have to fight another 5' long board either. I did one side, will probably put up the other side (half) shortly. After pup gets her walk. I'll save that long shelf board for the shelf I want put above the normal shelf (over the clothes rod) in that closet. Someone else will have to do that - it's way too high up for me to try. It's going to be a storage/linen closet. I did spend a good amount of time looking for the level. I looked in the back room twice for it. the 2nd trip there I 'saw' it. right out in open space waiting for me! eatrealfood - that'd sure be a good idea - a girl's shop class. I would have loved it. Learning to patch drywall, put up a shelf, fix a squeaky floor board, wire a lamp, etc would have been good things to learn back then.
