Well, I dont specifically do keto but I am doing low carb.

I like to grab a rotisserie chicken and make either broccoli or green beans with buttah.

Steak with mushrooms and a small salad

Tuna salad in a pinch

Egg salad. Mine has the eggs, some bacon, mayo and cayenne.

Brisket, slowly cooked in the crock pot with gravy and a veggie. Usually green beans.

Some sort of sausage or hot dog with loaded cauliflower casserole.

Taco salad with no shell.

Pork tenderloin,again with brocolli. I will make cabbage for SO with this but none for me. Ick.

Hamburger steak with onions and gravy and green beans. Not perfect keto because of the gravy but depending on portions its low carb-ish.

A local Mexican place has a dish with grilled chicken and steak, poblanos,onion,tomato and mushrooms. All covered in cheese. It comes with tortillas but I discard those. It's really good.

A quick cheese or ham and cheese omelette when I just CANNOT think about it anymore....

I wish i liked fish or seafood. It would give me more variety. But the occasional tuna is all i can manage.

Costco (frozen, defrosted) sockeye salmon topped with a mayo/horseradish sauce, baked in the toaster oven for 14 minutes.

You really have to make this meal. We have eaten so often, it's delicious. I wasn't sure I would like it because of the cream cheese, but it's delicious!!!

Fajita Salad without the broken taco shell pieces.

I have several recipes that I found on Pinterest or Once Upon a Chef that are very good. Chicken Cordon Bleu, Chicken Marsala, and a broccoli cauliflower cheese soup with sausage that is great. DD tried all these recipes first since she has been in keto for over a year now.

I also have a Dijon chicken stew with kale and potatoes that is tdf but there are those potatoes. I have considered making it with cauliflower but have not tried that yet.

I made a chili rellenos casserole. It's about 6 servings.

28 oz can mild green chilis

1 lb pork sausage or turkey sausage

1 lb hamburger or ground turkey

1 lb grated colby cheese

6 eggs

1/4 cup hot sauce

1 diced onion/yellow or white

4 cloves minced garlic

salt to taste

Preheat oven to 350. Line a 9x13 casserole dish with the green chiles(buy canned, already seeded, slice down the middle & lay flat). Pour the excess liquid from the can into a bowl with the eggs, hot sauce and salt...whip. Brown the 2lbs of meat with the diced onion & minced garlic, dump on top of the green chilies. Dump the egg mixture on top. Top w/ grated cheese. Bake for 1 hour covered.

I don't do Keto or low carb but I am not much of a pasta eater. That looks like a perfect lasagna recipe to me. Going to try it.

Steak or chicken on salad. Broiled veggies with meat. Pork chops with coleslaw. Parmesan chicken wings and slaw. Creamed soups from scratch. Taco salad, no chips.

I guess I had a keto meal tonite and didn't realize it. Taco salad.

My keto breakfast- I have seen people talk about keto coffee where they put butter or oil in their coffee. That does not appeal to me but I have started putting half and half in my coffee and that is breakfast.

I had 3 eggs, scrambled in butter before I went to bed this morning.

Just had a taco salad,no lettuce no shell for my "breakfast."

And I am very proud of myself for NOT eating the cheese dip and chips that i did not order,but turned up in my bag . I gave them away. And it hurt. That place had the BEST cheese dip.
