Baseboards and door/window trim design dilemma

We are putting new baseboards and door/window trim on the main floor. What we had was Victorian style with 5 inch baseboards and 2.8 inch casings. Now, with our 8 ft ceilings, would it make sense to put in 7 inch baseboards and 3.5 inch casings (of a more simple and contemporary design)? Because it looks like a good opportunity for an easy upgrade. Or it will look like we try to hard and those sizes should be left for homes with higher ceilings?

Also, choosing wider casing will make our job easier since they will cover the wall damage left after removing the old casing (I know there is a proper procedure for removing trim without causing much damage to walls, but still there will be some cuts, marks etc that will need to be repaired).

So, what do you say? Size up or not? Thank you!
