How does a mitered edge countertop work?

Let’s say you want a 2 inch or even 3 inch mitered edge countertop. The edge that hangs over 2 or 3 inches, won’t that get in the way of the drawers opening? Or do they use extra plywood to raise the height of the countertop so that it still hangs over 2 or 3 inches but doesn’t get in the way of the drawers?
We are trying to determine how low our sink should sit in order for it to be under mount, but with this correlate with how much of a mitered edge we have?
The photo of the completed kitchen below shows an island with a large mitered edge and I believe the other counter is no miter or maybe just a 1 inch. (I think).
The white kitchen is mine and I plan to do somewhere between 2 and 3 inch mitered edge but I don’t know how high or low the sink should sit or what happens to the drawers when you try to open them?
