Comments (3)I'm assuming that you want to use them as shellies (green-shelled beans) which is probably their best use. The best indicator of maturity I've found is the pod color. When the red streaks on the pod begin to turn purple, then the seeds are ripe. You'll get the best cooked color in this stage. The seeds can dry very rapidly at this point - especially in your climate - so you'll want to pick at least every other day....See Morecranberry beans?
Comments (11)Hmmm... I'm assuming this time of year they're fresh. We get them fresh here. I like them mostly two ways. Cooked in some water or broth with garlic, until tender. I don't use too much water/broth and as they're starting to get tender I let some or most of the liquid boil off, depending on what I'm going to eat them with or on. I like them on rice or by themselves as a side. I also make them as above but with the addition of some ham or bacon or ham hock. Like Annie I also have used them in chili or soup. They can be blanched and frozen for a great addition to winter veggie soup/minestrone/chili. Comments (8)I LOVE the old fashioned string bean types and grow a number of them. Old Timey Long Cut Greasy is a white seeded greasy bean which comes in pretty early, here in Oklahoma. Our family favorite is Tennessee Cutshort, which is a string bean (not greasy). It's not a true cutshort, but has the large, fat pods of some cutshorts, with seeds spaced a bit further apart. Woods Mountain Crazy Bean is a bush, string variety which is extremely heat resistant and ever bearing. I believe this bean was first introduced, right here, when the forum was under Gardenweb. I've grown Ruth Bible, which is a superb old Appalachian heirloom. I've been very pleased with it. Anyway, there are hundreds of great stringed beans out there. One of my favorite places to go, to find them is Sustainable Mountain Agriculture. The Sample Seed Shop has some great ones. I'm trying the Spangler pole bean this year. Another place I love to look at the stringed types, though not all they carry are stringed beans, is Sandhill Preservation Center.
