Backsplash or other option for budget bathroom reno?

Hi Houzzers!
We are doing a mini budget friendly reno in our main bath. We love our vanity and will be keeping it (likely painting BM Classic Gray or a white type color). We are replacing the laminate with Ivory Fantasy granite, will install an undermount oval sink in bisque, will update faucet to Moen Belfield, and paint walls SW Sedate Gray. The tub and toilet have to stay and are in great condition, albeit the lovely almond color. We will also paint the wood surrounding the mirror the same color as the vanity cabinet.
The dilemma is what to do about the backsplash? Should it be the same granite, and if so, how high? The one outlet seems to be in the way...not sure it's worth moving. Do you put granite right up to it? The highest part of the faucet will be just over 6 inches if that matters.
Thanks for your input! The part that looks ripped out is the original laminate backsplash ... It had to be removed for the countertop template. And it was glued on...
