Removing quartz backsplash

We want to replace our microwave, as it’s looking pretty shabby. The problem is that it’s one of those GE Spacemakers, which aren’t made anymore, and I can’t find anything the same height (16”). The only option I’ve seen is the Whirlpool Low-Profile, but that would leave a 6” gap in the cutout in the backsplash. So I’m considering removing the slab b/s and replacing it with tile.

I’m aware that there may be some damage to the wall, and I’m ok with having to fix it, if so. But it’s the sidesplash that has me stumped—it’s installed onto the side of a cabinet. Do I risk doing un-fixable damage to the wood?

Has as anyone dealt with this issue?
