Pickle juice chicken questions

I have some boneless skinless chicken breasts and thighs. I could just cook them. But I was thinking I could try the pickle juice thing. I have too much pickle juice. I have an impulse buy new bag of panko. I could make fried chicken. This kind of chicken is less tender than my favorite, so brining would be good, right?


Does it work with skinless?


How long should it soak?


Drain on a rack?


Pat dry before coating?
