Pickle juice chicken questions

I have some boneless skinless chicken breasts and thighs. I could just cook them. But I was thinking I could try the pickle juice thing. I have too much pickle juice. I have an impulse buy new bag of panko. I could make fried chicken. This kind of chicken is less tender than my favorite, so brining would be good, right?

Does it work with skinless?

How long should it soak?

Drain on a rack?

Pat dry before coating?

I have a feeling of Déjà vu, so if I asked this already, please forgive me. :)

I soaked boneless skinless breasts overnight in pickle juice and raw eggs. I did not drain or pat dry. immediately shake into whatever coating you're using. I love the pickle brine!

I've also brined chicken in pickle juice, but only for about 4 hours. It does have the faint taste of pickle, BTW. I didn't pat them dry, just removed them from the marinade, rolled in corn flake crumbs and baked them.

They were OK, but as I said, tasted vaguely of dill pickle, as should be expected.

Thanks. That's is what I was thinking too, but was hoping to confirm it from a more experienced crew than I! This will only be my third canning experience -- I put up jalapeno's last year. This year my garden is much more productive and so far I have canned 4 quarts of salsa using a recipe from the Bell Blue Book.

I don't think roasting them will work well for pickling them. First of all you really need the beet juice for flavour and secondly the texture of roasted beets is different, boiled gives a better texture for pickles IMO. Its not all that messy. Wash the beets and boil with the skins on. Reserve the beet juice. Submerge the beets in cold water and when you can handle them ( but still hot)cut off the root end and just slip the skins off under cold running water. Wear rubber gloves to prevent getting pretty pink hands!

I know that followers of homespun folk remedies have strong beliefs. No need to disturb that, There's no magic in pickle juice. Many people have night cramps because they are partly dehydrated; drinking more water during the day often solves the problems. A lack of salts can also play a part, drinking a sports drink supplies several electrolytes and bananas supply potassium. If you want to eat more vinegar, pair it with olive oil and eat more salad.

Our family had an old favorite from the 1950's or '60's. We called it green mold. It was a coleslaw with lemon and lime Jell-o to mold it. The Jell-o made it sweet, like the ones with pineapple or whatnot, but it was really good (at least to me, who grew up on it). It was tortured for many years to make it more diet friendly. It had artificial sweetener, lowfat or fat free "mayonnaise", and all the possible substitutions of yoghurt, etc. I won't list all the ways that it was disappointing, but I did lose my taste for it. I found the recipe and made it once (that's how I know that those who didn't grow up on it don't get the appeal). I followed the recipe, as stated, with all the mayonnaise, etc. It was delicious! It was delicious before the Jell-o was added, and that was really just enough to mold it and add that hint of sweet. You couldn't "see" the Jell-o (which you could once it got tinkered with). Do yourself a favor. Make it the right way, or make a different salad.

Thank-you, both. I hope they would taste a little of pickle or why bother? Well, actually, it's because I have too many jars that have lost their pickles. :) I have a good picture now of what I'm going to do. I appreciate the input!

Report: I just used combined juice from a few different pickle jars I'd emptied, hot, dill and sweet. Marinated for 7-8 hrs. Out of the brine, dripped over it a little not to make a mess, into mostly AP flour with some small panko and S&P, from there into the frying pan with goose fat. I wanted to use it up. :) I didn't notice any particular flavor or texture difference from using oil, but it did spatter more. Even though it had solidified on top of the container, there was probably some juice caught in it. I have a big old spatter shield which I almost never use, but it was extremely helpful. :)

The coating was delicious and very pickle forward, though it didn't stick well where the tongs hit it. The chicken tasted like chicken. Partway through dinner, I thought the pickleness got old. I think I'd od this for appetizers (excluding the goose fat), because one coatingful bite at a time was really good. It was a whole thigh, with pickle coating in every bite, that got old.

I wanted to try it since people had been discussing it. It was an excellent experiment. Thanks for the help.
