Boiling Oil Issue

Hey all. I don't usually come across anything odd in the kitchen that needs help, but now I have. I have discovered I enjoy fried chicken marinated in pickle juice.


I have an issue with my hot oil excessively boiling. I believe I've ruled out every possibility but the fact that my chicken was marinated in pickle juice. It makes the chicken juicy! I'm assuming it's just a bit much for my regular 'ol vegetable/corn oil.


I used a fresh batch of the same oil to fry up some blanched frozen potatoes. These even had lots of ice crystals and I did not have a boiling problem with this same oil. I ruled out every other possibility such as condensation overnight before cooking the chicken, etc. I'm pretty certain it's the marinade.


The smoke point of corn oil is one of the highest. Actually, I think it was "vegetable" oil I've been using at least that's what the label reads.


Does anyone know of a chicken marinade that might work better for the frying?
