We have hooks and heavy 33x66 bath sheets and have not had any problems with them drying - I have found that they don't dry as well on bars because the towels have to be doubled over to fit on the bars if you don't have room for 36" bars. Double bars were even worse IME because there ended up being eight layers of thick fabric in a small area. Two towels on one double hook (Delta Victorian, not one I'd recommend) dry just fine. I live in coastal New Hampshire where it is downright malarial in the warm months and arid in the cold; towels are laundered once a week and we have no problems with funkiness. We do also have the issue of towels not being hung neatly on bars, and I think decorative towels are silly (I am pretty much a failure as a girly-girl!). :-) Here's a picture: One way to evaluate whether towels dry sufficiently on hooks where you live would be to get some of the cheap over-the-door hooks from somewhere like Walmart and give it a shot before installing anything permanent.

Side topic for those who indulge: Where do you keep your wine/liquor/glassware/ice? Where do you prepare a drink? Our kitchen has an slightly angled wall at the end near the breakfast room (room of all meals). The fridge/freezer is at the beginning of the angle. Between the fridge and a doorway to the back hall are 24" upper and lower cabinets where we make drinks. (Ice & water through the freezer door.) This (mostly) keeps DH out of my way while I'm making dinner.

I talked to the county assessors office to find out some details. For our county, anything over 120sf needs a permit to be moved onto your property. If the building is already there its ok to do what ever I want other than afterwards, they want to be updated on the condition, so they can make a tax assessment. This is ag land so the taxes are different than residential. Also they don't do inspections for electricity. The office I spoke with directed me to contact the Planning department to discuss the compost toilet regs. The county contact was not concerned about using the building as a cabin for sleeping. Ulisdone, I get the potential for rodent issues. We get field mice in our home seasonally. We have a cat and she is somewhat helpful, but sometimes I have to run a trap line. Summersrhythm, DH loved your idea about the 2 buildings and sunroom, with a smile he visualized it. But we won't be doing it, lol, but it was nice seeing him with a brightened smile. Maybe for beginners, I will just rough the exterior walls in without insulation, and do the electric. I do want to insulate the floor. I am drawing up elevations and floor plans now.

We go out to eat rarely, and only started doing so a bit in 2019. 2020 stopped that, but we did order carry out a few times. And delivery a couple times from the one place around that will deliver out here- glad it's Chinese :) But driving around local into our little town. 1 of the 2 bars is closed. The other seems to be closed too, but looks like it's being worked on while it's closed. The two taverns of food and drink are still open. The few local restaurants are still open. Except one- it was a new branch of an existing restaurant that was slated to be opened in June 2020. It's still sitting finished, shuttered and yet to be opened. A couple places that are more open during tourist season look like they might not try again this year. Another one that is usually closed was chugging out the smoke, so someone is there- it's a bbq place :) But still closed for the season :(. And one place that usually depends on the tourist season and some limited winter hours for the locals has expanded a bit and is doing fuller winter hours to accommodate more carry out orders.
