Comments (10)Tomorrow's "restock refrigerator day" so today it's clean out veggie bins. Pulled beef/veggie stew from freezer and adding extra celery, carrots, parsley and a handful of cherry tomatoes. Spinach salad sauted with bacon and topped with boiled eggs. The rest of the eggs get deviled. Made up macaroni and cheese dish using leftover cheese bits and Canadian bacon for tomorrow. Comments (6)Hmmm, what do my mini-meals consist of? Just about anything I want since I'm retired and am home most of the time. Usually it's shredded wheat/blueberries for breakfast. Since I have that so late, it's usually just 3 hrs till lunch. Today I had a salad with about an ounce of chicken breast on it. Mid afternoon, it was about an ounce of cold salmon and half an apple. My evening 'meal' is my largest/most calories. Tonight it's not-that-good-for you, but what I want.....bean soup and small amt of mac/cheese. I usually have 2 glasses of skim milk a day...1 w/lunch..1 w/dinner. Later on I'll either have more salad w/hardboiled egg or hot cereal w/half a banana. Just before going to bed, it will probably be either an ounce of cold chicken or cold salmon. When I read the above, I think "Wow, that's a lot of food", but -I- know that none of it was in large portions. Comments (24)I had roasted red (small) potatoes with carmelized onions and parsley; filet minot and a great salad with homemade croutons - leftovers from last nights fondue bread. Tonight's dinner was supposed to happen Valentines Day but I had a kidney infection situation and ended up on the sofa most of the day, before mustering enough energy to make cheese fondue with bacon, sour french bread, celery and apple to dip. Comments (14)I had almost that same menu for Thanksgiving dinner, and I served squash soup as a starter. Also roasted asparagus as another side, which is festive for a dinner party. Go to the dollar store and get some cheap glass mugs, they will look fancy when filled with soup. I have a set that I use for both hot drinks and soups. A great dessert would be warm vanilla pudding topped with warm dried fruit compote. I had that at a friends house in Great Britain one miserable winter day, and have been a fan of that comfort food ever since. I just mix whatever dried fruit that looks good that I can get, with some orange juice, a cinnamon stick, a slice of ginger, a touch of maple syrup, whatever floats your boat. Edited to add this link as an example of a cheap glass mug, from Dollar Tree, Clear glass mugs There are many different styles out there. Edited to add that if you are not used to the immersion blender and use it on very hot soup, it can splatter and burn you, but once you get the hang of it, it works great. However, I think the plastic ones will wear out faster if you use them a lot on very hot foods. At least that has been my experience.
