These were good! I got the recipe at Recipezaar. It's the orange zest that makes it a success! I baked in at 375 F for 22 minutes. Might work with cranberries too. Next time, I'm going to add a little orange extract. Just a bit to add a little more orange flavour.. cuz I really like it.LOL Raspberry Orange Muffins 1 cup milk 1/2 cup butter, melted 1 1/2 teaspoons orange zest (I used 2 tsp) 1 1/2 teaspoons vanilla extract 2 large eggs 2 cups flour 3/4 cup sugar 2 1/2 teaspoons baking powder 3/4 teaspoon salt (I used 1/2 tsp) 1 1/2 cups fresh or frozen raspberries (or blueberries) Preheat oven to 400 F; line 12 muffin cups with paper liners. In small bowl, combine milk, melted butter, eggs, vanilla, and orange zest. Sift flour, sugar, baking powder and salt into a large bowl; add milk mixture and stir just until blended; fold in raspberries (I added about 1 tablespoon of flour to the frozen berries so that they don't sink to bottom of muffin). Divide batter equally among prepared muffin cups. Bake until golden and tester comes out clean, about 15-20 minutes.

Nearly everyone seems to be giving you breakfast and dessert ideas, so here is an entree for a change: CRANBERRY ROAST OF PORK 1-1/2 cups fresh cranberries 2/3 cup sugar 1 cup finely chopped onion 1/2 cup dry red wine + 1/2 cup dry red wine 4 pound loin of pork, either with bones or boneless Salt Pepper 1/2 teaspoon thyme 1 cup canned beef bouillon 1 Tablespoon cornstarch 1/3 cup cold water Preheat oven to 350 degrees. Combine berries, sugar, and water; boil, cook for 5 minutes until berries pop & mixture is thick. Add onion and 1/2 cup wine. Rub pork with salt, pepper, thyme. Place bone side down in roasting pan just large enough to hold the roast and juices that will develop. Spread cranberry mixture over roast. Roast 2-1/2 hours or about 40 minutes per pound or to internal temperature of 170 degrees. Combine remaining 1/2 cup of wine with beef bouillon and baste meat frequently with this and pan juices. If you need more, mix 1 part wine with 2 parts bouillon. Dont let pan juices scorch. (The onions will scorch a bit, even with basting, but they still taste good.) When roast is done, transfer to board for carving. To thicken pan juices if desired: Measure pan juices. For each cup of pan juice, mix 1 Tablespoon cornstarch with enough cold water to make a paste, then combine with the cooking liquid and cook until thick. Spread some sauce over carved meat and pass rest at the table. Serves 6. Adapted from Americana Magazine, November 1976 From my notes: Use a roasting pan just large enough to hold the meat and basting liquid to prevent evaporation of the yummy liquid. Baste gently so you dont disturb the cranberry-onion coating on the meat. We serve this with noodles to take advantage of the sauce.

I've read it is not good for cheesecake but I don't make cheesecake anyway. I have seen recipes for cheesecake using it in Cooking Light magazine, but I dunno if the recipes are any good. Probably not good in danish and the like either. I use it mostly to spread on bagels and toast and english muffins, in which case it tastes just fine. I top it with a dab of homeade jam, yum. Great with lox, since that has a strong taste so I don't miss the extra taste for that application. Fine with those dream eggs, because they were flavored with the herbs anyway, and the neufatchel just added a wonderful creamy texture, even with 1/3 less fat. Since cream cheese is almost pure fat, 1/3 less doesn't make it a diet food by any means, but I like it just as well if not better than cream cheese for what I use it for, so that's what I buy for the calorie savings. I don't mind it in party spreads either. DH and I went out today on a chicken coop tour of East Dallas. (which was lots of fun, but a whole nother topic) Then I had to clean the kitchen in order to cook in it. But, my little grandson (a month away from 3 yrs. old) and I did get started on Nate's carrot cake cookies, but since we didn't finish making the dough until an hour before his bed time, and the dough has to chill at least an hour, it'll be tomorrow before we bake them and do the cream cheese part. It doesn't matter. Both DGS and I had a great time mixing up the batter. He got to taste the flour, the sugar, the butter, and all the other ingredients as they went into the mix. No germaphobes need taste these cookies when they're done! Thanks Nate for the recipe, and the fun time with my grandson! I put it under jam and on toast and bananas and apples all the time, but don't use it in "recipes." I can't wait to see what we get here! People don't stuff turkeys because it means over cooking the turkey to get the dressing to the safe temperature. I used to stuff the neck but not the interior. It gave me dressing with juices for the day and the rest went into a casserole for later. this was personal Thanksgiving when we had family thanksgiving elsewhere. When relatives made gravy by taking the bag of what ever that is out of the cavity of a butterball turkey and mixed it with a cup of flour and shook it up and then boiled it I thought, we are going to need our own meal later. These days I smoke a breast so no stuffing that way. I take the back and other oddments and make broth and use that in my gravy and dressing. As per the OP, we like our dressing soft-I make cornbread dressing. Sounds clever though for regular bread dressing.
