Anyone Have A Tried and True Cranberry Orange Muffin Recipe?

My friend was looking for a cranberry orange muffin recipe so I googled for her and found one--it was supposed to be one similar to the Starbuck's recipe. She made it and they turned out awful--and she's a great cook. So do you have one that has worked out great for you?

Not exactly what you asked for but this is a great muffin recipe posted by Monique. Your friend could sub cranberries for blueberries but not so sure how it works if she is wanting to use dried cranberries. I can't see an issue.

It doesn't make those "supersized" beasts served at most coffee shops but they are excellent in flavour and texture.

2 Cup of flour
3/4 Cup of sugar
1 Tbl of baking powder
1 Tsp of baking soda
1/2 Tsp of salt
1/2 Cup plain yogurt
1/4 Cup of orange juice
1/4 Cup vegetable oil
2 Tsp orange zest
2 eggs
1 1/2 Cup blueberries
1/4 Cup of sugar

1.In a large bowl mix the flour ,sugar,baking powder,baking soda and salt.. Make a well.
2. In a measuring cup ..whisk the yogurt,oj,oil,zest and the eggs.
3.Pour wet ingredients into the well.
4.Mix until smooth
5.Fold in blueberries.
Place mixture in 12 paper lined muffin cups filling 3/4 full. Sprinkle with coarse sugar if desired
Bake at 440 degrees for 25 mins(It took exactly that) or until set and tops are golden.

Not a muffin recipe, but I think it could be adapted. Definitely read the comments before making it, though. I think the last time I made these I ended up adding 1/4 cup of plain yogurt or sour cream. They are wonderful!

I made orange ice cream on Wednesday, but didn't use the 3-ingredient recipe. Finally took a picture of it so I could post on this thread. I don't have the Ben & Jerry's book, but found this (recipe below) on-line and it referenced the Ben & Jerry's book. It's very easy to make, but a bit different from the recipe Linda posted. I added the mint for a little bit of color. The three volunteer guinea pigs who tasted it said it reminded them of the Creamsicles/Dreamsicles of their youth. Apparently, the Creamsicle & Dreamsicle both have a sherbet shell but the Creamsicle has ice cream in the center, and the Dreamsicle has ice milk in the center. Orange Cream Dream Ice Cream from Ben & JerryÂs Ingredients: â¨ 1/3 cup Orange juice concentrate; thawed â¨ 2 teaspoons Vanilla â¨ 2 cups heavy cream or whipping cream â¨ 3/4 cup Sugar â¨ 2/3 cup Half and half (I added 2 T vodka to keep it from getting icy) Directions: Pour the cream into a mixing bowl. Whisk in the sugar, a little at a time, then continue whisking until completely blended, about 1 minute more. Pour the half and half and whisk to blend. Add the juice concentrate and vanilla and blend. I added the vodka at this step. Transfer the mixture to an ice cream maker and freeze following the manufacturer's instructions. Makes about 1 qt.

When I was married and taught school, I used to make bran muffins. Cannot find my recipe, but this one sounds soooooo close. And this COULD be it! Just make the amt you want for a warm breakfast, and keep the rest in the refrigerator! Refrigerator bran muffins 4 eggs 3 cups sugar 1 quart buttermilk 6 cups bran cereal with raisins 5 cups all-purpose flour 1 cup vegetable oil 5 teaspoons baking soda 1 teaspoon salt DIRECTIONS In a large bowl, beat eggs and sugar until well combines. Stir in buttermilk, cereal, flour, oil, baking soda and salt; mix well. Refrigerate at least 6 hours before using. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400 degrees F for 15-20 minutes or until a toothpick inserted near the center comes out clean. Batter may be stored, covered, in the refrigerator for up to 6 weeks

I agree with Chloebud on the freezing. Freeze the filling, and if on the day you want to make it and don't have the peppers on hand, you can put it in seeded zucchini or other squash halves, or small acorn squash, or just about any non-sweet fruit like that. Or just ramekins with a couple spoons of stock or water to make up for moisture from the peppers or other fruit. I haven't made them for a long time, so I don't have measurements, but a stuffed pepper I really like has chicken and feta cheese. Hollow the peppers, steam, poach or lightly roast the chicken pieces (or for heaven's sake use leftovers!), shred and add spices/seasonings to taste. Thyme or tarragon is great, plus some black pepper and sumac, but go with what you like. A plump kind of rice is nicer than basmati or other more toothsome kinds. White works well, but a sweet brown like Carolina gold is nice too. Cook the rice to well hydrated and tender. Crumble the feta or cut into small dice, about 2/3 to equal volume as the shredded chicken. Sauté white onion, about half the volume of the shredded chicken when raw and chopped, to just starting to get tender if you want them apparent, or to transparent if you like them less forward. Add same sized chop of the bits of the peppers tops removed from the stems, and and veg you like from same sized carrots to a handful of baby spinach. Sauté until tender or wilted or whatever. You only need a little of the added veg if you want a good portion of rice, but you can substitute veg for a lot of the rice if you prefer.. Mix all the ingredients warm so they'll start to meld and squeeze on a lot of fresh lemon juice. Add some more of the herbs and spices/seasonings you used on the chicken, to taste. You can add an egg or two as glue, but I don't bother. Stuff the peppers. Top with oiled breadcrumbs, cheese, or use some of the plain rice with an extra squeeze of lemon and a drizzle of olive oil. Bake. 360° F or so, until the tops are browning, the peppers are starting to color, and just starting to look wrinkly. If they're looking a little saggy take them out even if they're not browned or wrinkly yet. Use a thermometer to make sure they're cooked through as well as nice and hot. Thanks for bringing this up. I use ground turkey in place of ground beef almost of the time, now. I prefer it to beef, which we buy very little of anymore. It doesn't seem anything like turkey that you would have at the traditional thanksgiving meal that you associate the cranberry sauce with. Burgers or patties made from it can get very dry because the poultry doesnt have much fat in it. I prefer to make what I call "loose meat burgers", where the meat gets chunked into smaller pieces and gets browned in a skillet with an adequate amount of oil and laid into a nice bun and dressed just as you would any burger. It always needs some oil added to the mix if you are going to make patties or meat loaf or meat balls. I really prefer it to beef, anymore. We just lost our taste for beef, even the local grass fed beef no longer seems appealing. Ground poultry stands in for it quite well.

This is my muffin recipe. I use it as the base for all my muffins.

I just made two variations this morning, so certainly you could make a Cranberry Orange.

This morning I made Chocolate Chocolate Chip and Apple Oatmeal. Last week I made Sweet Potato. I'll go quickly and add the variations to the page..So if they aren't there when you click..come back in a bit. :o)

To make Cranberry Orange, I'd add the zest and juice of one Orange, use the other ingredients minus bananas, cinnamon and nuts and toss in a cup of dried or frozen or fresh cranberries.

A great way to really "release" the oils from zest is to rub it into the sugar very well. The friction of rubbing the zest and sugar releases more of the oils and lets the flavor spread through the "baked goods" more.

These were good! I got the recipe at Recipezaar. It's the orange zest that makes it a success! I baked in at 375 F for 22 minutes.

Might work with cranberries too. Next time, I'm going to add a little orange extract. Just a bit to add a little more orange flavour.. cuz I really like it.LOL

Raspberry Orange Muffins

1 cup milk
1/2 cup butter, melted
1 1/2 teaspoons orange zest (I used 2 tsp)
1 1/2 teaspoons vanilla extract
2 large eggs
2 cups flour
3/4 cup sugar
2 1/2 teaspoons baking powder
3/4 teaspoon salt (I used 1/2 tsp)
1 1/2 cups fresh or frozen raspberries (or blueberries)

Preheat oven to 400 F; line 12 muffin cups with paper liners.

In small bowl, combine milk, melted butter, eggs, vanilla, and orange zest. Sift flour, sugar, baking powder and salt into a large bowl; add milk mixture and stir just until blended; fold in raspberries (I added about 1 tablespoon of flour to the frozen berries so that they don't sink to bottom of muffin).

Divide batter equally among prepared muffin cups.

Bake until golden and tester comes out clean, about 15-20 minutes.

okay added the variations and pictures of the variations.
Those aren't bites, lol they are pinches. Notice the difference in the size of the Apple, that's because it didn't have the full 2 cups of AP flour, I had to get creative. :o)
