Anyone Have A Tried and True Cranberry Orange Muffin Recipe?

My friend was looking for a cranberry orange muffin recipe so I googled for her and found one--it was supposed to be one similar to the Starbuck's recipe. She made it and they turned out awful--and she's a great cook. So do you have one that has worked out great for you?

Not exactly what you asked for but this is a great muffin recipe posted by Monique. Your friend could sub cranberries for blueberries but not so sure how it works if she is wanting to use dried cranberries. I can't see an issue.

It doesn't make those "supersized" beasts served at most coffee shops but they are excellent in flavour and texture.

2 Cup of flour
3/4 Cup of sugar
1 Tbl of baking powder
1 Tsp of baking soda
1/2 Tsp of salt
1/2 Cup plain yogurt
1/4 Cup of orange juice
1/4 Cup vegetable oil
2 Tsp orange zest
2 eggs
1 1/2 Cup blueberries
1/4 Cup of sugar

1.In a large bowl mix the flour ,sugar,baking powder,baking soda and salt.. Make a well.
2. In a measuring cup ..whisk the yogurt,oj,oil,zest and the eggs.
3.Pour wet ingredients into the well.
4.Mix until smooth
5.Fold in blueberries.
Place mixture in 12 paper lined muffin cups filling 3/4 full. Sprinkle with coarse sugar if desired
Bake at 440 degrees for 25 mins(It took exactly that) or until set and tops are golden.

Not a muffin recipe, but I think it could be adapted. Definitely read the comments before making it, though. I think the last time I made these I ended up adding 1/4 cup of plain yogurt or sour cream. They are wonderful!

I don't know what you mean by "non-standard," but perhaps (1) the almond flavoring in the dough and (2) our favorite filling -- almond -- in this, our favorite recipe, will qualify. It's the cookie dough kind, not the yeast kind. I like to make them pretty small, and they come out pretty, too. I almost always make them with my friend. Here is a story about a very "non-standard" recipe that came out of our annual hamentaschen project. Several years ago, a couple of our kidz were helping us. Her son looked at the poppyseed filling (in the Solo can, of course) and said it looked like caviar. First we all said "ECHHHH...." and then we all had the same idea. What about hamentaschen with a non-sweet, pie crust type dough with a sour cream and caviar filling? And a fabulous appetizer for my son's then-upcoming bar mitzvah, which happened to be at Purim (the party was a masquerade), was born. I don't have a recipe for that (the caterer came up with something), but I imagine you could figure it out easily. Another year the store sold out of prune filling, and we tried to make our own in the food processor. COLOSSAL MESS everywhere! A real Lucy & Ethel moment. Anyway, here is the recipe we use every year -- it really is a good one. Happy Purim! Hamentaschen Â¾ c sugar Â½ c butter or margarine 1 egg 2 T milk 1 t vanilla 2 c flour 2 t baking powder almond, poppy, prune, or apricot pastry filling (2 Â½ - 3 12 oz. cans for a double recipe) In mixer bowl, beat together sugar and butter till light & fluffy. Add egg, milk & vanilla; beat well. Combine flour & baking powder; stir into creamed mixture. Cover & refrigerate dough 1 hour. On lightly floured surface, roll dough to 1/8-inch thickness. Cut with 3-inch round cookie or biscuit cutter or an inverted juice glass. Top each with Â½ t almond, poppy, prune, or apricot filling. Shape into triangles by lifting up edges & pinching dough together to make 3 corners. Leave center open. Place on ungreased cookie sheet; bake in preheated 350 oven for 10-12 minutes (usually takes more). Remove from sheet; cool on rack. Make 2 Â½ - 3 dozen. (I always double recipe)

Cheryl, the link appears to work. Here is the recipe. Trust me it is an awesome tasting bread and oh so easy. Have made this for meals for folks who are in need of a meal from our church. They think I have slaved over this bread...NOT! Let me know if you try this recipe and what you think. Barbara Bakes, also has some other great recipes that I havent tired but hope too! Cinnamon Swirl Brioche adapted from Artisan Bread in 5 Minutes a Day and Cook's Illustrated Brioche dough (makes about 3 large loaves) 1 1/2 cups lukewarm water 1 1/2 tablespoons granulated yeast (2 packets) 1 1/2 tablespoons kosher salt 8 large eggs, lightly beaten 1/2 cup honey 1 1/2 cups (3 sticks) unsalted butter, melted 7 1/2 cups unbleached all-purpose flour (I only used 6 1/2 cups) Mix the water, yeast, salt, eggs, honey and melted butter in a 5-quart bowl, or lidded (not airtight) food container. Mix in the flour, using a spoon until all of the flour is incorporated. Cover (not airtight), and allow to sit at room temperature for about two hours until the dough rises and collapses. Refrigerate in a lidded (not airtight) container overnight and use over the next 5 days. Filling 1 cup confectioners sugar 3 tablespoons cinnamon 1/2 teaspoon salt Assembling the Cinnamon Swirl Brioche Grease three 9 x 4 inch loaf pans.* Dust the surface of the refrigerated dough with flour and divide dough in three equal pieces. On a well floured board, pat each piece into a 7 by 18 inch rectangle. (If necessary, use a bench scraper to loosen dough and add more flour underneath the dough so it doesn't stick.) Use a spray bottle, lightly spray the top of the dough with water. Sprinkle a third of the filling mixture over the dough leaving a 1/4 inch border on the sides and a 3/4 inch border on top and bottom. Spray filling lightly with water so the filling is speckled with water. Starting on the short side, roll the dough up into a cylinder and seal seam. Let it rest for 10 minutes. Use your bench scraper to cut the loaf in half lengthwise; turn halves so cut sides are facing up. Gently stretch each half into a 14 inch length. Pinch the two ends of the dough together and braid dough by laying the left piece over the right keeping the cut side up, until pieces of dough are tightly twisted. Pinch ends together. Transfer loaf, cut side up, to prepared loaf pan. Repeat with remaining dough. Cover pans loosely with plastic wrap and allow to rise until doubled in size. Top of the loaves should rise about 1 inch over the lip of the pan. (Mine took 3 hours, but the Cook's recipe says 1 1/2 hours.) Preheat oven to 350*. Bake approximately 25 minutes until the crust is golden brown. Reduce oven temperature to 325*, ten loaves with foil and continue baking until internal temperature registers 200*, 15 to 25 minutes longer. (I just got a new wireless thermometer thanks Tiff! and it took my bread exactly 15 minutes longer.) Let cool for 5 minutes in the pan on a wire rack. Remove loaves from pans and cool completely on a wire rack before slicing, about 2 hours. *You can bake all three loaves at once, leave the dough in the fridge for up to five days, or freeze the dough.

If I'm planning to cut up my leeks anyway, I cut them up then put them in my salad spinner, fill it with water, swish them around, then drain. I do that two or three times, until they're clean. It's much easier than trying to clean them whole. I saw that technique on America's Test Kitchen, but I think they used a colander and bowl. I rarely buy them because they are so expensive. I need to try growing them instead. Nancy, if you're still reading this thread, there's no reason to use different fertilizers for your veggies than your flowers. Your flowers deserve the good, organic stuff too, not just your veggies. Think about it, they need the same things. Take your toxic stuff to the hazardous waste dump, and give your flowers the same things as your veggies. Sally

I make an olive oil mayonnaise and use half olive oil and half avocado oil - otherwise the olive oil flavor is too strong. I mix this with garlic to make aioli. Here's my Ranch Salad Dressing recipe, using fresh ingredients: 2 shallots, minced 3-4 cloves garlic, minced 1/2 tsp white pepper 1/2 tbsp freshly ground black pepper 1/4 cup fresh dill, minced (large stems removed) 1/4 cup Italian parsley, minced (stems removed) 1 dash cayenne 2 tbs fresh lemon juiice, as needed for thinning 2 cups mayonnaise, or a combination of mayo and sour cream If you have a small food processor, you can put roughly chopped garlic and shallots and fresh dill in together for mincing or fine chopping. It is okay with this recipe to puree the ingredients, although you may want to put the dill and parsley in last, in this case. Then combine with the rest of the ingredients in a bowl and stir together by hand. Chill one hour and adjust seasoning, if necessary. Best to chill overnight before serving. It keeps for about a month, but may separate slightly; if so, stir before using. I created this recipe for a friend who asked me for it.

This is my muffin recipe. I use it as the base for all my muffins.

I just made two variations this morning, so certainly you could make a Cranberry Orange.

This morning I made Chocolate Chocolate Chip and Apple Oatmeal. Last week I made Sweet Potato. I'll go quickly and add the variations to the page..So if they aren't there when you click..come back in a bit. :o)

To make Cranberry Orange, I'd add the zest and juice of one Orange, use the other ingredients minus bananas, cinnamon and nuts and toss in a cup of dried or frozen or fresh cranberries.

A great way to really "release" the oils from zest is to rub it into the sugar very well. The friction of rubbing the zest and sugar releases more of the oils and lets the flavor spread through the "baked goods" more.

These were good! I got the recipe at Recipezaar. It's the orange zest that makes it a success! I baked in at 375 F for 22 minutes.

Might work with cranberries too. Next time, I'm going to add a little orange extract. Just a bit to add a little more orange flavour.. cuz I really like it.LOL

Raspberry Orange Muffins

1 cup milk
1/2 cup butter, melted
1 1/2 teaspoons orange zest (I used 2 tsp)
1 1/2 teaspoons vanilla extract
2 large eggs
2 cups flour
3/4 cup sugar
2 1/2 teaspoons baking powder
3/4 teaspoon salt (I used 1/2 tsp)
1 1/2 cups fresh or frozen raspberries (or blueberries)

Preheat oven to 400 F; line 12 muffin cups with paper liners.

In small bowl, combine milk, melted butter, eggs, vanilla, and orange zest. Sift flour, sugar, baking powder and salt into a large bowl; add milk mixture and stir just until blended; fold in raspberries (I added about 1 tablespoon of flour to the frozen berries so that they don't sink to bottom of muffin).

Divide batter equally among prepared muffin cups.

Bake until golden and tester comes out clean, about 15-20 minutes.

okay added the variations and pictures of the variations.
Those aren't bites, lol they are pinches. Notice the difference in the size of the Apple, that's because it didn't have the full 2 cups of AP flour, I had to get creative. :o)
