I make a sorbet with mixed berries that's very nice.

Very Berry Sorbet

3/4 cup sugar or Splenda
1 cup water
Dissolve sugar in water in saucepan and cool.
3 1/2 cups of berries (I used frozen) any combo.

Put into a blender and puree with the sugar syrup.
Add 1/2 cup heavy cream (I use my homemade plain yogurt.) You can omit the cream, but is does make it creamer.
Pour into ice cream maker and process until thick. Put in freezer container and let set for 2 hours.
You may have to soften it in the microwave for a few minutes as it does get very firm.
3 1/2 cups of mixed frozen berries

Try it I think you will like it.

Janet, I think I would love the orange flavor too, so I hope you try it and report back. Your idea of mandarin oranges is very good; I would also try adding orange zest, orange juice or OJ concentrate (like frozen in a can), and maybe even add a tiny bit of orange extract (as a last resort). If you get something you really like, I want to hear about it, Please!

Regarding other flavors, I make a cranberry salad in the fall with raspberry gelatin and orange zest and mandarin oranges. I'm just thinking out loud here, but wonder if that might make an interesting sorbet...

Orange ice cream sounds really good to me, too.
I don't have any suggestions as to what to use.
But the Mandarin oranges seems like a good idea.

Anyone remember Dreamsicles?
Now I'm wanting one!

Wonder why no one ever makes a grape ice cream.
With Concord grapes.
NOT grape sherbet, but a true grape ice cream.

I think I would try some frozen orange juice concentrate along with a can of mandarin oranges drained....and proceed from there....maybe add a little grated lemon peel as well.

And once you get the orange flavor where you like it, try adding chocolate chunks or ganache to it. Sounds like an odd combination, but it is absolutely delicious!!

There used to be an ice cream sold which was vanilla with swirls of orange sherbet running through it. It tasted like a Creamsicle or Dreamsicle. I liked it. Haven't seen it in years.

Ive done raspberry, black cherry chocolate chunk, pineapple coconut and am going to make peach with the leftovers from jamming. All are excellent!

Orange and chocolate are one of my favorite combos. Not strange at all. Delectable!

Here is a recipe from my Ben & Jery's book. I've been meaning to try it, I am hoping it tastes like a Dreamsicle from my childhood!

Orange Cream Dream

Cream Base:

2 large eggs
3/4 c sugar
2 c heavy cream
1 c milk

Whisk eggs in a mixing bowl until light and fluffy. Whisk in the sugar, a little at a time then continue to whisk until completely blended. Pour in the cream and milk and whisk to blend.

1/3 cup frozen orange juice concentrate, thawed
2 tsp vanilla extract

Add to the cream base and process in ice cream maker according to manufacturere's instructions.

The orange sounds delicious & I may try it this weekend. DH has been making kiwi sorbet like this for decades & I think he adds the sugar directly to the puree without making it into a syrup, plus a little lemon juice for tang. It tastes great & the black seeds against the lime green make it visually very appealing.

I made orange ice cream on Wednesday, but didn't use the 3-ingredient recipe. Finally took a picture of it so I could post on this thread.

I don't have the Ben & Jerry's book, but found this (recipe below) on-line and it referenced the Ben & Jerry's book. It's very easy to make, but a bit different from the recipe Linda posted. I added the mint for a little bit of color.

The three volunteer guinea pigs who tasted it said it reminded them of the Creamsicles/Dreamsicles of their youth. Apparently, the Creamsicle & Dreamsicle both have a sherbet shell but the Creamsicle has ice cream in the center, and the Dreamsicle has ice milk in the center.

Ingredients: â¨
1/3 cup Orange juice concentrate; thawed â¨
2 teaspoons Vanilla â¨
2 cups heavy cream or whipping cream â¨
3/4 cup Sugar â¨
2/3 cup Half and half
(I added 2 T vodka to keep it from getting icy)

Directions:
Pour the cream into a mixing bowl.

Whisk in the sugar, a little at a time, then continue whisking until completely blended, about 1 minute more.

Pour the half and half and whisk to blend.

Add the juice concentrate and vanilla and blend. I added the vodka at this step.

Transfer the mixture to an ice cream maker and freeze following the manufacturer's instructions.

Makes about 1 qt.

When I was a kid Dreamsicles were orange sherbet and vanilla ice cream swirled together. I remember when they changed to a sherbet shell with an ice cream center, but I liked them better when they were swirled.

I'm going to make this very soon!

I will have to try to create an orange dreamsicle one of these days. I did the raspberry last week and it was very easy.

Alexa planted a seed last night. I have mango trees and I had a bowl of cut up mango getting ready to go bad so I put the bowl in the freezer last night. This morning I made a batch of 5 minute mango ince cream. OMG good!!!

I forgot to mention that I added a tiny bit of gel food coloring (yellow and red) to make the ice cream color orange. Just seemed like the right thing to do! lol

Apparently, I'm one of those people who should only follow recipes and not try to deviate from them. I say this because my orange ice cream was a mess!! I used a 15-1/2 oz can of mandarin oranges (drained), 3/4 cup Splenda, 1 cup heavy cream, 2 T. vodka and 1/2 t. orange extract. The flavor was good, the texture terrible. I ended up with what appeared to be little curds of butter (??) in an orange liquid. I'm sure I didn't over blend it, but this is the first time I didn't use frozen fruit. Could that be the problem?? Should I have frozen the oranges first?? Sorry I don't have better news to report -- guess I'll stick with strawberry and peach.

Janet, whenever I've made the 3-ingredient ice cream, my fruit was ALWAYS frozen.

Maybe you can try it again but freeze the mandarin oranges first, and let us know how it goes.
