What to do with winter squash

This is the time of year when I'm seeing several different varieties of winter squash in the stores and while I've tried cooking it several ways, I can't ever figure quite what to do with the rind/hard skinned outside. Do you peel it before cooking? Cook it with the peel on? Cook it first in one way or the other and then scoop out the flesh? Eat peel and all? Have done the Butternut several times and being fleshy and smooth skinned, it's relatively easy to prepare but today, tried a Delicata type which has external ridges and a relatively thick skin that turned out to be extra tough even though the inside flesh was quite nice even though somewhat thin.

Need a little advise here and maybe a decent recipe or two.... Really like the idea of something tasty and different on the table but not crazy about the unsure preparation. Thanks.
