I thought it was one of the ones I got from my dear MIL when she passed away. I'm going to look for it so I can see the recipe. Jessy, I like the Reynolds wrap non-stick foil as well. I use it to line my baking dishes when I make bar cookies and brownies. I hope it's not killing any of us:-) If I use it for the sweet potatoes, would I cut down on the oil in the recipe? Ann, your recipe looks delicious, I have copied it and will try that one as well. I've never had sweet potatoes with parmesan cheese before, but I like both so I'm going to give it a whirl. Your photos, as always, are mouthwatering. Kathy, it sounds like the wedges in your recipe are pretty big? I'm looking for some crisp or crunch on the outside, but tender on the inside. That's a good basic recipe for me to start with, and the dipping sauce sounds like I could forget the potatoes and just eat that!!!! Thanks everyone for such good recipes and tips. Claire, it's so easy it's embarrassing, the first time I made one I was astounded, I was just sure it would stick to the towel and not unroll, or break apart or SOMETHING. Of course it didn't. I will point out, though, that you should roll it up in a smooth linen towel, not a terry cloth one, or you'll have a fuzzy pumpkin roll. Ask me how I know.....sigh. I have this recipe, but not with cheese. Baked Sweet Potato Fries 2 lbs. Sweet potatoes, peeled 2-4 tbsp. Toasted sesame oil 2 tsp. Ground cumin 2 tsp. Chili powder 1 tsp. Paprika 1 tsp. Salt Lightly oil 2 non-stick cookie sheets and set aside. Cut the peeled sweet potatoes into "french fries". Place "fries" on cookie sheets, and spread them into a single layer. Drizzle the sweet potatoes the sesame oil, ground cumin, chili powder, paprika, and salt. Bake at 375 degrees F. for 20 minutes. Turn "fries" and bake for another 20 to 25 minutes, until lightly browned and crisp.

I was having Sweet Potato Fries at the Wayside Grill in Mount Shasta, CA which were served with a dip. I asked the waitress for the recipe and she said if I could guess one of the ingredients she would tell me. I guessed Mayo and she gave me the other one which was Honey... I mixed this together at home until I got the color and taste as described by smcanlis.
