Making Sweet Potato Fries in the Oven

OK, Sweet Potato Mavens, I need your expertise. I have tried 3 different recipes recently for Sweet Potato Oven Fries, and they've all been just so-so. What's the secret? I scrub the potatoes, and leave the peel on. Then I cut them into sticks, as evenly as possible. I toss them with olive oil and some spices, usually chili powder, sea salt and pepper, occasionally some garlic. I bake them on a baking sheet at about 450 degrees. THEY DON'T GET CRISP! They just get brown and tough. I know they can be made crisp and delicious in the oven, maybe I should use the convection feature? What do you recommend, other than frying on the stove? DH, boys and I really love sweet potatoes, so thank you in advance for your help!
