Comments (2)I checked a few sources and don't find anything about Hocks specifically, but If I were doing another large dense cut for smoking, say a shoulder, I would certainly use basic brining techniques and smoke from there. Here is the recipe I use. BRINE FOR PORK BUTT 2 Quarts Warm Water 1 1/2 Cups Pickling Salt 1/2 Cup Molasses 10 Cloves Garlic, peeled and crushed Mix all in a large bowl and add Pork Butt, be sure meat is completely covered. Comments (21)As far as the sweet glazes as concerned, I can take them or leave them. When I was growing up, my mother would serve her ham naked, but with a hot mustard sauce on the side.
