No recipe.....just general directions...
Cut the ham into small pieces.....and think of some veggie you can eat....I would use onion and some peppers and perhaps broccoli....
Butter a baking dish the size you will need to feed who you want to feed.
butter it and put into it a layer of bread slices, cut about 1/2 inch thick ro less. Play puzzle and cut some bread up to fill all the chinks.
Add some of that cut up ham...some....a very little or a solid layer. Whatever sounds good.
Add some veggies....perhaps a can of mushrooms or fresh mushrooms sauteed until most of the moisture leaves...
Add some cheese.....what can you have? mozzerella? berhaps blue cheese? even some slices of Velveeta if that's what you can eat.
Another layer of bread.....then mix up your eggs and milk. I use 4 eggs per cup of milk....if your eggs are really huge 3 eggs will work....try 5 eggs for 2 cups of milk...mix...add seasonings. What can you have? I would add worchestershire and black pepper, but perhaps about 1 T. dried parsley would be better for you.
Slowly pour the milk egg mixture over the bread/cheese/ham mix.....let it sit until all the liquid is absorbed. If you have a big dish you may to add another cup of milk with perhaps 3 eggs....or half cup of milk with one egg....
Just make sure all is soaked and there is no dry bread in the dish. It may have to sit an hour or more.
Then bake at 375 until really puffy and browned.....and a toothpick inserted doesn't come out with raw looking stuff on it.
Should take 40 to 75 minutes.....depending on the size of your dish...the amount of bread and eggs you used.
It will puff up like a souffle....beautiful! Serve it quickly, because like a souffle it will quickly sink.

Do I cut the bread up into cubes like for pudding, or keep in whole slices?

Slices. But cut some up to fit into corners or whatever.
I like to remove the crusts on the top layer just for presentation, but not necessary. If you do remove them, you can dice them up and add to the middle (no waste). Or dry and use for bread crumbs for something else.

And I've always done it with bread cut in cubes, about 3/4", cut the ham in about 1/2" cubes and veggies about the same. I like to make mine in muffin tins for individual servings, bakes much faster, too. You can even put a little surprise in the center, like a cube of Brie Cheese or some other soft melting cheese. Gives a nice custardy effect, and be sure not to overbake!!

Sorry Lpink, but I had to smile when I read this post. You mentioned in your Diet thread that you don't eat pork.

I love savory bread puddings/stratas. One of those dishes that I just wing.

I very rarely eat ham. That's why I had to post here asking for a recipe. I eat it so rarely that I have no idea how to make anything with it. BF bought the ham. He rarely eats ham either! We used it for seasoning for bean soup. It is taking us FOREVER to use the stuff up!

LPINK, I know that you don't eat a lot of meat, especially red meats. I just thought it was cute that you said you don't do pork, but then asked for a recipe with ham.

Thanks to you, I know what I'm going to have for breakfast tomorrow. I think I'll make a Strata with Canadian Back Bacon, mushrooms and cheddar cheese and whatever else I have on hand.

G-d bless him, he can't pass up a "two for the price of one" deal to save his life. I wanted a little bit of ham to make some navy bean soup, I think I've made it once before in my whole life. Now I've been eating ham for the past two months!

I made the ham strata recipe that Ann provided. Absolutely delicious! One word of warning ... I cut the recipe down a bit because I only cooked for 2. The recipe specifies an 8" pan. I used an 8" and before pouring the custard over the bread, moved the entire strata into a 9" pan because I had already reached the edge of the smaller pan and wasn't done adding ingredients! Oh, I used asparagus in it and about 1/2 the amount of ham recommended. Delish!

I hate "cubes of ham" in anything....I shred the ham in a bean soup and cut thin slices for a strata.....but I really hate biting into a "cube" of ham....

Well, I FINALLY got around to making the strata. I had to go out of town for a job interview last week. Anyway, put it together last night and baked it this AM. It was YUM. I made the recipe AnnT posted, except I used lowfat mixed shredded cheese and 1% milk. With all the butter and cheese in the recipe it was plenty rich. I even shredded the ham like LindaC suggested. I really liked the strata, I'll be making one of these again when I have stale bread to use up. But I'll probably just do spinach, mushroom and cheese, no ham. Or use a few fake bacon bits for flavor. It was a fun easy dish!
