I plan to make banana nut muffins but my bananas are not ripe enough. I put them in a brown paper bag last night so hopefully they will be ready tomorrow. I'm also making cranberry nut, and cinnamon apple. 2 dozen of each and I'll freeze them in 4 packs. I have another oatmeal muffin recipe that's my fav if I can find it. I'd like 2 doz of them also.

Lucky you! I'm so ready for cooler temps and being able to bake bread again.

I had to turn on the big oven the other night to bake fish. Even with central air it still heats up the kitchen. I usually use my toaster oven, but something is up with it (electrical burning smell). Even though it's still working I'm not taking a chance using it. Waiting on a replacement from Breville.

All the baked goods sound so delicious...yum, yum, yum.

I didn't bake but I want the cool temps to come back so I can have the oven meals I like so much. I never use the oven in the summer month. Everything is done on the grill, but I love roast chicken, baked apples, sweet potatoes. But it will be in the 80's again next week so I'll have to wait.

Not a sweet baked good but still using the oven today. I'm making stuffed cabbages. Son dropped off two big cabbages so I'll get plenty to freeze for future meals. I'm also making a meatloaf for the freezer. I'm not fond of precooked frozen meals other than soups/chili but it sure does save time and energy costs since the oven will already be on.

Tomorrow will be muffin baking day.

MamaP, We love stuffed cabbages. I have not made for many years, I know DH misses them. When I make meatloaf, I make 2, one to eat and one for freezer. Had freezer one last Thursday.

Kathy. The kids like stuffed cabbage but hubs hates it and would rather starve. LOL. I usually plan to have them on a day I have enough leftovers to feed him. He only gets away with this with a few foods. For instance he hates all cooked veggies but he eats a spoonful and knows I'll rip his tongue out if I ever hear him say **I don't like them** kids are likely to pattern their likes and dislikes from what the adults say at the table. My grandsons will eat every veggie and they love them with the exception of canned spinach. ..they will eat it fresh in salads. I've had to set this law of sorts down years ago because my husband is sooooo picky. When it comes to healthy eating there's no room at the table for a picky adult around kids. LOL. I sound like a meanie but truely I'm not. Lol

Eta.....I LOVE stuffed cabbage.

Mama, my mother thought like you did. If she had the oven on for one thing, she'd make another, often a dessert.

Sjerin, I'm recovering. 18 days now but the past few days I've been able to move around and do a few things. First 13 days I had never been so sick and honestly thought a few times I wasn't gonna make it. Thank God I finially do have insurance now as I had 3 different antibiotics, steroids and an inhaler ( xopenex). The flu this year is extremely violent or it could be the pneumonia along with it really complicated it. Anyway I am recovering finially. Sjerin Thank You for thinking of me.

Now I received a letter from the school that hand, foot, and mouth disease (virus) is going thru the school big time. Sigh.

Sounds wonderful! It’s gonna get up to about 94 today, I think. I cant wait until December when I can cook banana bread and have it not be so hot. Even then it will only get down to 55 or so!

i have cabbage rolls and baked beans in the oven. Once that is done in goes orange/date/nut loaves and oatmeal/apple/cinnamon muffins.

What is stuffed cabbage?

October is the month, I make pumpkin bread for a business acquaintance. Been doing it for at least 26 years. One loaf for the office and one for home. LOL, he always finds time to send me a note that he's starting to smell pumpkin bread as a gentle reminder. :o)

I love pumpkin bread! Used to make it, but it’s a lot of work! I have a recipe I will try that is a loaf with the filling in the center. Not the rolled one.

Kathy I think pumpkin bread is different from pumpkin roll. The pumpkin bread is a quick bread like banana bread. Just add pumpkin and the spices.

This is recipe for pumpkin bread I've used for many years.

Pumpkin bread

Makes 2 regular loaves or 4 mini.

Temp: 350

Baking time for 2 loaves 50-60 *mine is ready in 50

Mini loaves: 40-45 * mine 40

Ingredients

3 eggs

1 lb can pumpkin

3/4 cup vegetable oil

1/2 cup water

2 1/2 cups all purpose flour

2 1/4 cups sugar

1 1/2 tsp soda

1 tsp salt or less

3/4 tsp nutmeg

3/4 tsp cinnamon

optional and I never use: 1/3 cup chopped nuts and 1/2 cup raisins

In large mixing bowl beat eggs, pumpkin, oil, water.

With whisk blend flour, sugar, soda, salt and spices.

Add flour to pumpkin mixture and mix well. I use my mixer. Stir in nuts/raisins if desired.

Bake in TWO 9x5x3 loaf pans that are greased and floured

When done, cool in pan on a rack, for about 5 minutes, then remove from pan.

Glenda I'm saving your recipe and will make them closer to Thanksgiving. Thank You for sharing your recipe.

Haven't done any baking here, although the temps have finally cooled off after highs in the high 90's earlier this week. However, reading all of your baking stories is making me want to bake something - everything all of you have made sounds so good!

Thanks Dawn. They are a winner. The boys both took one to the bus stop this morning along with a small glass of 1% milk. I think were the only ones whose kids sometimes eat on the run. We do stand back, not approaching any other kids when foods involved. Lol.

Dandy, the pumpkin muffins were also an untried recipe but not as good as the ones I have made previously....kinda dry and not as much flavor. Here is my old recipe which produces moist and very flavorful muffins:

Pumpkin Muffins

1 3/4 c all purpose flour

1 1/4 c sugar

1 tsp salt

1/2 tsp baking soda

3/4 tsp cinnamon

1/2 tsp ground cloves

2 large eggs

1 c canned pumpkin (not pie filling!)

1/2 c + 2 tbs salad oil (I use canola)

1 c raisins, craisins or dried apricots

1/2 c warm water

1/2 chopped nuts (optional)

Preheat oven to 400F. Soak the dried fruit in the warm water to plump. Mix all the dry ingredients together and set aside. Mix the eggs, pumpkin and oil and blend well. Drain the fruit and add to wet ingredients. Pour the pumpkin mixture into the dry ingredients and blend until just mixed....do not over-mix!! Spoon into lined muffin cups and bake 15-20 minutes or until tested done. (I do jumbo muffin cups and bake 25-30 minutes)

I sometimes sub 2 tsp pumpkin pie spice in place of the individual spices. I also sometimes add a touch of ground ginger and allspice. And I top the muffins with coarse sugar crystals before baking.

And here is the link to the sausage rolls recipe: Caramelized Apple, Onion and Fennel Sausage rolls. I used mild Italian sausage so omitted the fennel seed. And I added a scosh of dry mustard powder as my previous recipe included that as well.

I have to pace myself with these or would try to eat them all as soon as they come out of the oven!!

Glad you are feeling much better, Mama. My, when you get sick, you really get sick! Were the kids super-helpful around the house while you were down? Something tells me they were. :) I hope you can get a flu shot when you are feeling better, and I'm glad you were able to get insurance; that's a huge stress reliever!

These recipes look so gooood. I have a habit of printing them out, but not making them as it's only dh and me in the house now, and so many people don't eat sweets and/or carbs these days. Phooey on them!

Sjerin yes the boys were very helpful. My 9yo Chip took control of the laundry. Lol. I can't really say he's in training any longer as he is a pro. Tim prefered catering to me so he sat around me with a book and I swear every 30 seconds was shoving a straw in my mouth. I finially told him if he gets that straw near me in less than 30 minutes I would refuse all liquids. LOL...30 minutes to the second and the straw was back. LOL. Up until a few years ago I was rarely sick but past few years yikes. I think its caused from having two autoimmune conditions but that's just my thoughts.
