Comments (9)This one's from Nathalie Dupree & it's a keeper: COCONUT CAKE 1 1/4 cups flour 1 1/4 cups cake flour (not self-rising) 1 TBL baking powder 1 tsp salt 1 1/2 cups sugar 3/4 cup soft butter 2 large eggs 1 tsp vanilla Icing: 3 egg whites, stiffly beaten 2 cups sugar Meat of 1 fresh coconut, ground or grated 1 cup coconut milk For the cake, preheat the oven to 350°. Grease two 8" cake pans & dust w/flour. Place circles of waxed paper in the bottoms of the pans & grease & flour them. Sift the flour, baking powder & salt together. In a separate bowl, cream the sugar & butter, then add the eggs & vanilla & beat well. Add the dry ingredients & milk alternately, starting & ending w/the dry ingredients & beat until smooth. Pour the batter into the pans & bake 20-25 minutes. Cool on a rack, remove from the pans & peel off the waxed paper. To make the icing: Place the beaten egg whites in a saucepan & add sugar, coconut & coconut milk. Over medium heat, bring the mixture to a full boil & boil 4-5 minutes. I did find another one (from Weight Watcher's I guess originally), that just mixes a cake mix with 12 oz. of unsweetened, canned fruit. Comments (8)terri pacnw - Sorry I can't remember who shared this recipe on this board about 18-months ago, but the link to the original recipe is below, and it's become a favorite cake of ours. Here's my lower-fat, lower-glycemic version for ONE 9-inch cake: 1/2 c. white whole wheat flour 1/2 c. c. wholegrain spelt flour 1/2 t. baking powder 3/4 t. baking soda 1/2 t. salt 1 t. cinnamon 1/4 c. melted coconut oil 1/4 c. agave nectar 2 eggs 1 c. grated carrots 1/2 c. unsweetened crushed canned pineapple, drained 1/2 c. chopped walnuts (the more the merrier ;-) - plus more for garnish on the top) I bake mine in my Sharp Convection/Microwave Oven (15-17 minutes 325°F LOW/MIX BAKE), so adjust the time and temperature to a standard oven. I also make a sugar-free/low-glycemic cream cheese frosting with 3-4 oz. cream cheese, agave nectar to sweeten (2-3 T. - I've never measured - this is a "dump recipe" ;-), approx. 1 T. milk/cream/half-and-half (whatever you have on hand) - more if frosting is too thick, plus enough dried milk powder to create a thick cream cheese frosting. I use Morning Moo's or 1st Best Whey Milk powder - which are whey-based milk substitutes and a little sweeter to taste than regular non-fat dry milk. Comments (20)Oh, my! I can't deal with an oven without mitts. My great auntie made lovely potholders but I can't use them. My skin cries. :) Word of caution--if the mitts you got aren't water shedding, don't use them near the hot water from the bain marie. It's like touching a hot pot with a wet potholder or towel, but your can't drop it until you can get the mitt off. Most are fine, but some are just pretty fabric. I have a pair of cute pink ones that I was given. Only, really, for taking a hot pot to the table because they're just cotton so not safe enough around water, and too pretty to use around spatter that will stain. :) The bread pudding will still be sweet, because there is sugar in the gingerbread, but it's going to have sausage and lots of spices and fresh ginger and onions. The other bread is one of my sourdough starter discard breads, also from the freezer, and it's very sour, so I'm hoping they'll cancel each other out. :) Congrats on delighting your suffering friend!!...See Moresooz
