Countertop Analysis-Paralysis, now Granite/Corian?

Well, I've been obsessing for months over marble-look quartzes, and haven't found the "One". Today, I took my hubby out to look. He is largely uninterested but does have surprisingly good taste and doesn't give a flip about trends or image. He didn't really like the marble type patterns but he loved pure white (which he spotted on a cultured marble vanity top, lol).
I also showed him the one granite that has ever spoken to me...Blue Pearl. I saw it on a desk in a showroom and about swooned but alas, I thought it was too dark for my little country kitchen with its medium brown oak cabinets.
Sooooo.... now we are considering putting the Blue Pearl on the Island and a pure white Corian (or possibly quartz) on the sink run and other counter so the kitchen won't be too dark.
One area is my concern. It is a table height eating area that Hubby does not want to raise to island height. I see his point. Would this area be easier/better to fabricate in Corian or quartz?
