Comments (11)Socks this is the recipe my SIL uses. It close to what you describe in that the meat is cut in strips and wrapped around individual eggs. Sorry I don't know what the original source is. Calabrian Style Braciole (Rhonda) 1 1/2 pounds flank or top round sliced 1/4 " thick, pounded thin and cut in 8" long strips. hard boiled eggs - 1 per strip 1/2 cup bread crumbs 6 TBSP fresh ground Parmesan or pecorino 4 TBSP fresh Italian parsley chopped 3 cloves of garlic minced 1 TBSP olive oil 1/2 tsp salt 1/4 tsp pepper chopped onion minced garlic Homemade tomato sauce Mix bread crumbs, cheese,parsley,garlic, olive oil ,salt and pepper ingredients together . Spread mixture evenly amongst slices. Place an egg at one end and roll up. Tie the rolls securely with string. Saute the onions in some olive oil until tender but not browned add garlic and saute another minute or two. Remove onion and garlic. Add beef rolls and brown on all sides. Lower heat and add tomato sauce. Simmer gently for about an hour until meat is tender. Do not overcook or meat will fall apart. Serve with pasta and the sauce. My brothers, I'm sure, would have several "bizzo meals" to mention, as I like ingredients more exotic for their tastes (like mushrooms in my spaghetti sauce) but I think my worst was the first I served my now DH... One of my brother's had given me a variety of flavored vinegars asa Christmas present... one a "Salsa Vinegar" that I'd never tried before. I made a vinaigrette dressing, and the new BF (now DH) had forced down several bites of his salad (good boy, taught to clean his plate) before I got to my first one. One bite and I immediately removed the salad bowls from the table with "you do not have the eat this!!" It was HOT, and awful... Comments (20)In the interest of objectivity, I forgot to note that if the potato absorbs some of the salty liquid, you'd need to add additional water or unsalted broth to make up for the diminished liquid. The resulting broth would, indeed, be less salty. By the way, since my husband is on a low sodium diet now, it took me a while to figure out how to make tasty mashed potatoes. You don't appreciate the contribution of salted boiling water for cooking the potatoes until you're not able to use it. Every time I made traditional mashed potatoes, they tasted beyond bland. Boiling peeled & cut up potatoes in plain water, seemed to wash away every bit of flavor. I finally learned to steam whole unpeeled potatoes until tender enough to mash. The steaming did not wash away flavor and the potato skins also kept the flavor intact. I just mash the soft potatoes, adding unsalted butter & some warm milk. I remove the potato skin chunks as I'm mashing, but sometimes I don't even bother doing that. Comments (14)We have 7 acres, but only about 1/2 acre of 'lawn'. I have what I call a farm lawn, consisting of whatever comes up, kept mowed a few times a year. It gradually turns into grass, as most other plants can't handle being cut back too many times. The problem we have is that our lawn area is a number of small patches, rather than a continuous swath. I bought a very small rider, and even that requires a huge amount of maneuvering. The real answer would be a zero-turn, but they are quite pricey. With all that, I've managed to create some areas where the rider won't reach. I can mow it with the weedeater, but it doesn't look the same. I may pick up a cheap little mower for spots like that. This year, I planted a small experimental patch of real grass, tall fescue. It is gorgeous and soft! Time will tell how it handles our summer heat. I'm really opposed to spending time, money, and water on a 'crop' that I can't eat!...See Moreprovogal
