Change in flooring will cause gap - what to do?

A friend of mine lives in a townhouse on a slab. The engineered hardwood planks over a padding were water damaged. She wants to switch to Luxury Vinyl Tile, but there there would be a height difference, since the engineered hardwood sat higher.


She would very much prefer not to have to remove and reset the baseboard. Could she replace the quarter round with a base shoe that sits taller? Do they make tall base shoe?


And then what happens at the door frames? How do you fill in the gap? The installer mentioned caulking it, but that sounds, um, amateurish? I don't have the specific measurements for how much gap we are talking, but the photos might help. The board on the right in both photos is the LVT she has picked out.
