Read the packages very carefully. Not everything that is sold as "crab" is actually crab. Pollack is being used extensively to simulate crab. Fortunately, most states have a law that forces sellers to spell it "krab" so you know the difference.

I've make crab cakes from several of BJs canned crab meat. Not the best. If you really want good crab meat, buy it fresh from some local source.

I make crab meat ravioli, but honestly, the one and only time I bought the canned crab meat, it wasn't very good. I couldn't really finish it. Perhaps if you had a crabcake recipe with enough seasonings to hide the fishy flavor? But then again... Sadly, no local source around here, so it's fresh or frozen crab here. That'll do for me - which is why I go minimal and just do ravioli.

Used to make salmon patties with canned salmon (again, a lot of seasoning), but have gotten spoiled with fresh salmon also...

Good canned lump crabmeat at Whole Foods. Be careful of labels, you want real domestic crab, not stuff like Phillips that’s marketed as Maryland but comes from SE Asia. It’ll cost you.

Maybe I'm spoiled living in Seattle (or very close to it) but other than tuna for sandwiches, I don't do canned fish/seafood at all. It's fresh all the way!! IMO, there is no comparison for flavor or texture.

Canned crab meat taste and texture quality have improved significantly in recent years.

Gardengal, I also do not buy canned seafood, except for the occasional can of crab meat that I use for deviled crab. That recipe is so spicy that it doesn't need fresh crab, but for everything else, I use king crab legs. I also only use fresh tuna for tuna sandwiches, but this week it was salmon that we cooked on the BBQ, and it had a great smoky flavor. Kevin did tell me that the salmon he bought in Seattle (at Pike's Market) was the best he had ever had. He had asked me what I wanted him to bring back from Seattle when he went to visit Amazon (one of his customers), and I told him to get a salmon at Pike's market. He then said, "I'm not carrying a fish back on the plane" but after he got to the market, he changed his mind! I poached it in my huge Italian fish poaching pan using Julia Child's recipe, and we ended up with a lot of great fish stock. I froze a lot of the fish meat for later use, and since I vacuum sealed it, it kept well.

We have excellent seafood markets here in Los Angeles also, mainly because there is a demand for it and people will pay the prices.

Here is the recipe,I use. It’s delicious. I make them slightly bigger. I use the refrigerated crabmeat from Costco. You can use all crab if Dh doesn’t like scallops.

My DIL gave me a low-carbs version of crab cakes - delicious.

I can find fresh crab at my local grocery store - chilled in a little container in the seafood section. Check the expiration date though!

Crab Cakes made with Shrimp Mousse

In FP pulse ¾ C cooked baby shrimp (canned-drained or thawed cooked, drained), 3 T heavy
cream (don't scrimp here w/milk - it won't work), 1 t sea salt, 1/8th t pepper.

Cakes: in a bow mix: 1 ½ # lump meat crab, 6 finely diced green onions.
Fold into the mousse.

Form patties and chill 10 - 20 minutes - a must. I've chilled 24 hours successfully.

Frying Pan: 2 T OO. Lightly fry crab cakes 4 min per side.

These are delicious, like I said, and they don't have the carbs of those breaded and fried. Any extra shrimp mousse works really well mixed with some horseradish and lemon to make a lovely dip. Still low-carbs.

Nancyofnc: do you use just the white part of the green onion in your crab cakes?

The “shrimp” and “mousse” reminded me of a crab cake I made for Christmas dinner a few years back. Nice change from the expected.
