A Cool Lunch for A Hot Summer Day

I had company for lunch today. Until yesterday afternoon, we've had NO air conditioning for FIVE days . . . lunch was planned with no air in mind but thankfully, we got our new unit installed yesterday. Lunch was all made ahead and was all "icebox" food -- cool and creamy tomato basil soup, a trio salad plate (meat, vegetable, fruit salad) and a chocolate mocha icebox cake. The soup was merely last year's canned tomatoes, chilled and then pureed with garden basil. Cold cream added just before serving; the vegetable salad was lettuce and grape tomatoes with homemade poppyseed dressing, the chicken salad was very simple -- shredded chicken, tarragon, thinly sliced red onion, salt and pepper and a dressing of half mayo and half sour cream. The fruit salad was a jello salad -- strawberry cranberry jello salad (recipe below). It was a perfect luncheon for a hot day and one that an early resident of the house might have served in the 30s!

Strawberry Cranberry Jello Salad

1 1/2 c. fresh or frozen cranberries

2 c. diced fresh strawberries

1/2 c. sugar

2 c. boiling water

3 (3 oz) packages strawberry Jello

2 c. cranberry juice, chilled

8 oz. can crushed pineapple, undrained

1 c. diced celery

Process cranberries in a food processor until coarsely chopped, stopping once to scrape down sides.

Stir together cranberries, strawberries and sugar in a medium bowl.

Stir together 2 cups boiling water and jello in a large bowl, stirring 2 minutes or until jello dissolves. Stir in juice, and chill 30 min or until consistency of unbeaten egg whites. Stir in cranberry mixture, pineapple and celery. Pour mixture into lightly greased 9 x 13 pan. Cover and chill 8 hours or until firm.
